4 1/2 cups all-purpose flour
3 cups sugar
1 cup cocoa powder
1 tablespoon baking soda
2 teaspoons salt
1 1/2 cups vegetable oil
2 tablespoons pure vanilla extract
3 cups strong brewed coffee
1/4 cup cider vinegar
1 (12 ounce) package firm silken tofu
3 cups semisweet vegan chocolate chips (many semisweet brands contain no dairy)
2 (8 ounce) packages cream cheese, slightly softened and cut into small pieces
1/2 cup butter, at room temperature
4 cups powdered confectioners' sugar, sifted
2 teaspoons pure vanilla extract

Steps:

  • Cake:.
  • Preheat oven to 350. Grease 3 (9-inch) round cake pans, dust with flour, and line bottom with parchment or wax paper.

2 cups sugar
4 eggs, at room temperature
1 3/4 cups semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk
3/4 cup sour cream
4 cups gently packed sweetened flaked coconut
