This quiche is easy and delicious as a main dish or brunch!

8 ounces bacon
1 (9 inch) unbaked 9 inch pie crust
2 cups sharp Cheddar cheese, shredded
1 cup shredded Monterey Jack cheese
3 tablespoons all-purpose flour
5 eggs, lightly beaten
1 ½ cups half-and-half
½ cup diced onion
1 (4 ounce) can diced green chile peppers, drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place crust in a 9 inch glass pie plate. Sprinkle bacon inside of crust. In a small bowl, combine Cheddar cheese, Monterey jack cheese and flour. In a separate bowl, beat together eggs, cream, onion and green chiles. Add cheese mixture; stir well. Pour mixture into pie crust.
  • Bake in preheated oven for 60 to 70 minutes, until set. Let stand 10 minutes before serving.

1 9" deep dish pie crust
3 eggs, beaten
1-1/2 C milk
1/4 C green onion, sliced
1/4 t salt
1/8 t pepper
dash ground nutmeg
3/4 C chicken, crab or ham - cooked & chopped
1-1/2 C swiss, cheddar, jack or harvarti cheese (6 oz)
1 T all-purpose flour

Steps:

  • Prepare shell according to directions on package. Meanwhile, in a bowl, stir together eggs, milk, onion, salt, pepper, nutmeg & meat. In another bowl, mix shredded cheese & flour together. Add to egg mixture; mix well. Pour egg mixture into HOT pastry shell. Bake in 325 oven for 35-40 minutes or until a knife inserted near center comes out clean. If necessary, cover edges of crust w/foil to prevent over-browning. Let stand for 10 minutes. Quiche Lorraine: prepare as above except omit green onion and chicken, crab and ham. Cook 6 slices of bacon until crisp. Drain, reserving 2 tablespoons drippings. Crumble bacon; set aside. Cook 1 medium onion, sliced, in drippings over medium heat until tender; drain. Add bacon, onion & swiss cheese-flour mixture to egg mixture.

I have a small cookbook from BHG that has favorite recipes from 1930 til 2001. This recipe caught my eye. I have just started to make quiche and this seems like a good starter recipe. It also seems like you also could use bacon, sausage, or shrimp for the meat.

pastry for single-crust pie
3 eggs, beaten
1 1/2 cups milk
1/4 cup green onion, sliced
1/4 teaspoon salt
1/8 teaspoon pepper
1 dash ground nutmeg
3/4 cup chicken or 3/4 cup crab, chopped
1 1/2 cups monterey jack cheese or 1 1/2 cups havarti cheese, grated
1 tablespoon flour

Steps:

  • Preheat oven to 450°.
  • Line pastry in pie plate as directed.
  • Line unpricked pastry shell with a double thickness of heavy-duty foil.
  • Bake in a 450°F oven for 5 minutes.
  • Remove foil.
  • Bake 5-7 minutes more or until pastry is nearly done.
  • Remove from oven.
  • Reduce oven heat to 325°.
  • Stir together eggs, milk, green onions, salt, pepper, and nutmeg in a bowl.
  • Stir in meat.
  • Toss the cheese and the flour together.
  • Add to egg mixture. Mix well.
  • Pour egg mixture into hot pastry shell.
  • To prevent overbrowning, cover edge of crust with foil.
  • Bake in 325° oven for 35-40 minutes or until knife inserted near center comes out clean.
  • Let stand 10 minutes before serving.

A flavorful and easy to make quiche that has instructions for vegetarians and vegans as well as those who eat eggs, meat and cheese. I take these to potlucks and they always are well received.

1 ready-made pie crust (I like to use Krusteaz Pie Crust Mix for a quick and tasty crust)
3 beaten eggs (, or egg replacer)
1 1/2 cups nonfat milk (or soy milk)
1/4 cup chopped green onion
1/4 teaspoon salt
1/8 teaspoon pepper
1 dash ground nutmeg
3/4 cup mushrooms or 3/4 cup spinach
1 1/2 cups your favorite, shredded cheese (, we like swiss or you can use vegan cheese substitute)
1 tablespoon flour

Steps:

  • Heat oven to 450 degrees.
  • Line pricked pastry shell with foil and bake 5 minutes.
  • Remove foil and bake 5 additional minutes.
  • Remove from oven and reduce temperature to 325 degrees.
  • In a bowl, stir together eggs, milk, onion, salt, pepper, and nutmeg.
  • Add vegetables or meat and stir.
  • Toss shredded cheese with flour and add to egg mixture, stirring well.
  • Pour into pastry shell and bake for 35 to 40 minutes.
  • You might want to add foil around the edges to prevent over browning.
