POBLANO CHORIZO SCALLOPED POTATOES RECIPE BY TASTY

Poblano Chorizo Scalloped Potatoes Recipe by Tasty image

This is the holiday side dish that your family will beg you to make again next year. Hearty and covered in Oaxaca cheese, this chorizo-laced, poblano-studded potato gratin is simply delicious.

Provided by Katie Aubin

Categories     Sides

Time 1h50m

Yield 8 servings

Number Of Ingredients 10

1 tablespoon unsalted butter, softened
1 lb chorizo sausage, casing removed
3 cloves garlic, minced
1 small white onion, roughly chopped
2 poblano peppers, seeded and roughly chopped
1 ½ teaspoons kosher salt
2 cups heavy cream
5 russet potatoes, sliced 1/8 in (3 mm) thick
10 oz shredded oaxaca cheese
2 scallions, thinly sliced

Steps:

  • Preheat the oven to 325°F (170°C). Grease a 9 x 13-inch (22 x 33 cm) baking dish with the butter.
  • Add the chorizo to a large pan over medium-high heat and sauté until cooked through, 5-6 minutes. The chorizo will not change color, but it will give off a lot of red oil and become firm enough to break up with a spatula or wooden spoon.
  • Transfer the chorizo to a bowl with a slotted spoon, leaving about a tablespoon of oil behind in the pan.
  • Add the garlic, onion, and poblanos to the pan and sauté until the oil is absorbed and the onions are translucent and red, about 5 minutes.
  • Add the salt, chorizo, and cream to the pan. Reduce the heat to medium-low and bring to a gentle simmer. Cook for about 10 minutes, stirring frequently, until the cream thickens enough to coat the back of a spoon.
  • Use a slotted spoon to remove the solids from the cream mixture and set aside. The infused cream should be the consistency of a thin gravy. If not, continue to simmer until that consistency is reached.
  • Arrange a layer of potato slices in the bottom of the prepared baking dish. Top with some of the chorizo mixture. Repeat with the remaining potatoes and chorizo mixture until the dish is full, finishing with a layer of chorizo and vegetables. Pour the cream sauce over the top and shake the pan slightly so the sauce settles to the bottom of the dish. Cover the pan tightly with foil.
  • Bake for about 60 minutes, until the potatoes are tender.
  • Remove the dish from the oven and turn on the broiler. Uncover the pan, and scatter the Oaxaca cheese over the top. Place the pan under the broiler to melt and crisp the cheese, 2-3 minutes. Watch very closely so it doesn't burn.
  • Let the scalloped potatoes rest for at least 15 minutes, then garnish with the scallions before serving.
  • Enjoy!

MEXICAN CHORIZO AND POTATO PRESSED SANDWICH

Mexican Chorizo and Potato Pressed Sandwich image

Inspired by the jam-packed Mexican sandwiches called tortas, this recipe layers on flavors and textures - think sausage, beans, potatoes, lettuce and more. Here, the bread is key: a loaf from the supermarket will be more tender and easier to eat than a crusty one from a bakery.

Provided by Food Network Kitchen

Categories     main-dish

Time 4h35m

Yield 8 servings

Number Of Ingredients 14

1 pound Yukon Gold potatoes, skin-on, cut into 1/2-inch cubes
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil, plus extra if necessary
1 pound fresh Mexican chorizo, removed from casing
1 large supermarket-style French or Italian loaf (about 16-by4-inches)
1/3 cup mayonnaise
1/2 cup refried pinto beans
1/4 cup jarred salsa verde
1/3 cup pickled jalapeno slices, roughly chopped
1/4 cup crumbled Cotija cheese
1 large ripe tomato, thinly sliced
1/2 cup loosely packed fresh cilantro leaves and soft stems, coarsely chopped
1/2 cup loosely packed fresh cilantro leaves and soft stems, coarsely chopped
1 1/2 cups thinly shredded iceberg lettuce

Steps:

  • Put the potatoes in a large nonstick skillet and cover with water by 1/2 inch. Season with enough salt to taste like seawater. Bring to a boil and turn down to a simmer. Simmer the potatoes until mostly cooked through, 3 to 4 minutes. Drain and let cool on a plate in a single layer.
  • Rinse and dry the skillet; place over medium-high heat with 1 tablespoon oil. When the skillet is hot, add the chorizo and cook, breaking up with a wooden spoon, until crisp and brown, about 6 minutes,. Transfer to a plate with a slotted spoon. With about 1 tablespoon of fat left in the pan - remove some if there's too much or add more oil if there's too little - add the cooled potatoes and cook, stirring periodically, until golden brown all over, 4 to 6 minutes. Add the chorizo back to the pan and stir for about a minute. Remove from the heat and let cool completely.
  • Slice the bread loaf in half horizontally and lay the two halves cut-side up. Pull out some of the bread from both halves (reserve for another use), leaving a 1/4-inch border. Spread mayonnaise on both halves. On the bottom half, layer ingredients in this order: refried beans, chorizo and potato, salsa, pickled jalapenos, Cotija, tomato, cilantro, shredded lettuce, some salt and pepper, and the top half of bread. Wrap tightly in parchment, wax paper or plastic wrap and secure with twine if necessary. Press at least 3 hours with a brick (see Cook's Note) or cast-iron skillet on top to flatten the sandwich, refrigerated. About 45 minutes before serving, bring the sandwich to room temperature.

Categories     Onion     Sauté     High Fiber     Dinner     Feta     Lime     Sausage     Sweet Potato/Yam     Tortillas     Bon Appétit     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 4 servings

Number Of Ingredients 7

2 cups paper-thin slices red onions
2 tablespoons fresh lime juice
2 cups 1/2-inch-thick sticks peeled yam (red-skinned sweet potato)
12 to 14 ounces fresh chorizo sausages (about 3), casings removed
2 fresh poblano chiles,* halved, seeded, cut into thin strips
8 7- to 8-inch-diameter flour tortillas
1 cup crumbled feta cheese

Steps:

  • Toss onions and generous sprinkle of salt in medium bowl. Mix in lime juice. Set aside to marinate, tossing occasionally.
  • Meanwhile, place yam in microwave-safe bowl. Add splash of water. Cover; cook on high until tender, 3 to 4 minutes.
  • Sauté chorizo in large nonstick skillet over medium-high heat until cooked through, breaking into small pieces with fork, about 5 minutes. Transfer chorizo to bowl. Spoon off all but 1 tablespoon fat from skillet. Add chiles to skillet. Cover and cook until tender, stirring occasionally, about 4 minutes. Drain yam; transfer to skillet. Add chorizo and toss 1 minute to rewarm filling.
  • Cook 1 tortilla at a time directly over gas flame or in skillet until heated, 10 to 15 seconds per side.
  • Arrange tortillas on work surface. Spoon filling in strip down center of each. Top with cheese, onions, and sprinkle of lime marinade. Fold in sides of tortillas.
  • Often called pasillas; available at some supermarkets and at specialty foods stores and Latin markets.

Tips:

  • Select the right chorizo: For optimal flavor and texture, opt for a good quality, Mexican-style chorizo. This type of chorizo is typically made with pork and seasoned with various spices, resulting in a smoky, slightly spicy flavor.
  • Prepare the poblano peppers properly: To remove the seeds and veins from the poblano peppers easily, roast them over an open flame or under a broiler until the skin blisters. Once roasted, place the peppers in a paper bag or covered container to steam for 10-15 minutes. The steam will loosen the skin, making it simple to peel off.
  • Don't overcrowd the skillet: When cooking the chorizo, potatoes, and poblano peppers, avoid overcrowding the skillet. This will prevent the ingredients from cooking evenly and may result in steamed vegetables rather than nicely browned and crispy ones.
  • Season to taste: While the recipe provides a suggested amount of salt and pepper, it's essential to taste the dish and adjust the seasonings accordingly. This will ensure that the flavors are well-balanced and suit your personal preference.

Conclusion:

The chorizo poblano and potato skillet is a delightful one-pan dish that combines the smoky, spicy flavors of chorizo with the earthy sweetness of poblano peppers and potatoes. It's a versatile dish that can be enjoyed as a main course or as a side dish. Whether you're looking for a quick and easy weeknight meal or a flavorful dish to impress your guests, this skillet recipe is sure to satisfy.
