100g butter, softened and cubed
100g brown sugar
75g caster sugar
2 large eggs
1 tbsp brandy
225g self-raising flour
1/2 tsp bicarbonate of soda
1 tsp cinnamon
1/2 tsp cardamom
1/2 tsp mixed spice
3 large very ripe bananas, mashed

Steps:

  • Pre-heat the oven to 160C fan-forced and grease and line a loaf tin with baking paper so that it extends over the sides.
  • In the bowl of an electric mixer, beat the butter and sugars together until light and fluffy.
  • Add the eggs and beat until the mixture is thick.
  • Beak in the brandy then add the flour, bicarb and spices and beat them through.
  • Finally, add the banana and mix just until combined.
  • Scrape the batter into the prepared tin and bake for 55 minutes or until a cake tester inserted in the middle comes out clean.
  • Leave it to cool completely in the tin.

1/2 cup unsalted butter, softened
1 cup sugar
2 large eggs, well beaten
3 ripe bananas, broken into bits
1 1/4 cups all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground mace
1/8 teaspoon ground ginger
1/2 teaspoon salt
1 teaspoon baking soda

Steps:

  • Preheat the oven to 350°F Butter and flour one 8 ½ x 4 ½" loaf pan.
  • Cream the butter with the sugar until light and fluffy.
  • Add the eggs and beat until combined. Beat in the bananas.
  • Combine the flour, spices, salt and baking soda in another bowl, then fold in the dry ingredients into the creamed mixture just until combined; do not over mix.
  • Pour into the pan and bake until a tester stuck in the middle of the banana bread comes out clean, 50-60 minutes.
  • Let cool on a rack before removing from the pan.

1 cup sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1-1/4 cups mashed ripe bananas (about 3 medium)
1/2 cup chopped walnuts
1/2 cup semisweet chocolate chips
1/4 cup chopped maraschino cherries

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda and salt; gradually add to creamed mixture. Beat in bananas just until combined. 2 cups pineapple juice
1/2 cup grenadine
