1 cup pecans, chopped
1/3 cup packed brown sugar
1/4 cup sugar
1/4 cup butter, melted
1 teaspoon ground cinnamon
CAKE:
7 green maraschino cherries, finely chopped
7 red maraschino cherries, finely chopped
1/2 cup shortening
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream

Steps:

  • In a small bowl, combine the first five ingredients; mix well. Set aside. Drain cherries on paper towels. In a bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla; mix well. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream. Fold in cherries., Pour half of the batter into a greased 9-in. springform pan; sprinkle with half of the pecan mixture. Top with remaining batter and pecan mixture. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen. Remove sides of pan just before serving.

As soon as I discovered how to make ginger syrup, this gingerbread coffee was on the menu last Christmas! I tasted my first Gingerbread coffee, or actually, Gingerbread Latte, in a branch of Starbucks in Manchester, England in 2006 - and it was love at first taste! Mine is a little bit more grown up and indulgent, as I have included a spiced, cognac laced whipped chantilly cream topping! We will be having this for Christmas morning this year, and for many more mornings or evenings I suspect, as the mood takes us! Enjoy this coffee not just at Christmas time, but also throughout the colder months. This recipe is not for latte, but for a fresh filtered coffee and cream version - but I think it is just as delicious.

2 cups water
1 1/2 cups granulated sugar
2 1/2 teaspoons ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/2 scoop fresh ground coffee, per person (in the coffee filter machine)
water
10 fluid ounces whipping cream
2 tablespoons cognac
2 tablespoons icing sugar
1/4 teaspoon ground cinnamon, plus extra to sprinkle
cinnamon stick, for stirrers

Steps:

  • Gingerbread Syrup.
  • Make the gingerbread syrup by combining water, sugar, ginger, cinnamon and vanilla in a medium saucepan. Be sure the pan is not too small or the mixture could easily bubble over.
  • Bring mixture to a boil then reduce heat and simmer the syrup, uncovered, for about 15 minutes. Remove the syrup from the heat when it's done - thickened, glossy and clear - and then cover it. This can now be stored in a bottle or jar in the fridge for about a month.
  • Gingerbread Coffee.
  • Make the fresh coffee in your coffee filter machine to personal taste - I have suggested 1/2 scoop of medium blend coffee per person for a tall mug of coffee.
  • Just before serving the gingerbread coffees, whip the cream with a hand held mixer until it just holds its shape - then add the cognac, cinnamon and icing sugar and whip until it is firm. If you have a cream siphon - decant the cream into the siphon for piping later.
  • When you are ready to serve the gingerbread coffees, pour some fresh coffee into each tall mug until about two thirds full; add a tablespoon of ginger syrup and stir the coffee - taste it and adjust the flavour by adding more syrup if needed. Then carefully spoon or pipe the cream on to the top of the coffee. Sprinkle with ground cinnamon and serve with a cinnamon stick as a stirrer!
  • If you have any cream left over - make another gingerbread coffee!

4 -4 1/2 cups all-purpose flour
1/2 cup sugar
1 1/2 teaspoons salt
2 (1/4 ounce) packages active dry yeast
3/4 cup whole milk
1/2 cup water
1/2 cup butter
1 egg
2 (8 ounce) packages cream cheese, softened
1/2 cup sugar
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 (2 ounce) can crushed pineapple in syrup, drained
11 red glazed cherries, halved
2 cups powdered sugar
3 tablespoons milk

Steps:

  • In large mixing bowl throughly mix 2 cups flour, sugar, salt& dry yeast. Set aside.
  • In small saucepan combine milk, water and butter.
  • Heat to 130ºF (butter does not need to melt).
  • Slowly add liquid to the above dry ingredients; beat for 2 minutes with electric mixer, scraping bowl occasionally.
  • Add egg and 1 cup flour.
  • Beat at high speed additional 2 minutes.
  • Stir in enough remaining flour to make stiff dough (approx. 1 cup).
  • Cover tightly.
  • Refrigerate at least 2 hours or up to 3 days.
  • When ready to make rolls, prepare filling.
  • In large mixing bowl combine cream cheese, sugar, salt, nutmeg and vanilla.
  • Beat just until well blended.
  • Stir in drained pineapple.
  • Grease 2 large cookie sheets.
  • Divide dough in half; keep one half in refrigerator while working with other half.
  • On lightly floured surface roll first dough half to an 11" x 10" rectangle.
  • Spread with half of the cream cheese pineapple filling.
  • Roll up on 11" side- pinch seams to seal.
  • Cut into 1" slices and arrange in shape of Christmas tree on cookie sheet.
  • Cover lightly with plastic wrap.
  • Repeat with remaining dough and filling.
  • Let arranged slices rise approximately 1 hour in draft free warm place.
  • Preheat oven to 375ºF- Bake 15 minutes; cover with aluminum foil to prevent browning.
  • Bake additional 5-10 minutes.
  • Remove from oven and allow to cool.
  • Place cherries, cut side down in center of each roll.
  • Combine powdered sugar with milk and drizzle over the rolls.

This is based off the original recipe #147253, but I have made enough changes it has turn in to a new item, with new flavors. This calls for only 2 cups cranberries, either fresh OR frozen.

1 cup all-purpose flour
1 cup white sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon

2 cups fresh cranberries or 2 cups frozen cranberries
1/2 cup sliced almonds
1/2 cup melted butter
2 eggs
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1/4 cup sliced almonds
1/3 cup packed brown sugar
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon cinnamon

Steps:

  • Preheat over to 350 degrees F(175 degrees C). Grease one 9 inch pie pan.
  • Combine flour, sugar, salt, cinnamon, clove. Mix well. Stir in cranberries and the almonds and toss to coat. Or add almonds and put berries in bottom of pie pan. Stir in butter, eggs and extracts. Spread into pie pan.
  • For topping: mix sugar, flour, cinnamon, almonds. Press in soft butter until you get a crumble mixture. Put on top of batter.
  • Bake for 40 minutes or until a wooden tooth pick inserted near center to come out clean. Serve warm or cold. Heats up nicely in microwave for a few seconds.
  • P.S. Frozen berries last one year. Make sure to pick through your frozen berries before using. The more wrinkles on a frozen berry the older it is. The batter will be a little thicker if you use frozen cranberries. It is easier to see the bad berries if you unfreeze them in warm water.

1 pkg dry yeast
3/4 c milk, scalded
1/4 c sugar
1 tsp salt
1/3 c butter
3 c sifted all purpose flour
2 eggs, beaten (plus more as necessary)
1 c oatmeal, uncooked
1/2 c diced mixed candied fruit

Steps:

  • 1. Soften yeast in lukewarm water. (Use warm water for dry yeast.)
  • 2. Pour scalded milk over sugar, salt and butter.
  • 3. Cool to lukewarm.
  • 4. Stir in 1 cup flour and eggs.
  • 5. Add softened yeast and oats.
  • 6. Combine 1/4 cup flour and candied fruits; stir to coat fruits evenly with flour.
  • 7. Add to dough; mix well.
  • 8. Stir in enough more flour to make a soft dough.
  • 9. Turn out on lightly floured board or canvas; knead until smooth and satiny, about 10 minutes.
  • 10. Round dough into ball; place in greased bowl; brush lightly with melted shortening.
  • 11. Cover and let rise in warm place until double in size, about 1 hour.
  • 12. Punch dough down; cover; let rest 10 minutes.
  • 13. Divide dough in half.
  • 14. From one half, pinch off 17 pieces of dough; shape to form balls.
  • 15. Arrange balls in the shape of a Christmas tree on greased cookie sheet.
  • 16. Brush lightly with melted butter.

  • 4. then set dough aside, covered with damp cloth,let rise, until double in size.
  • 5. when your dough has risen to double the size (this may take about 2 hours)put in 9x13-inch greased pan and spread with topping
