4 cups oats (Quick or Old Fashioned, uncooked)
1/2 cup shredded coconut
1/2 cup chopped pecans
1/2 cup honey
1/4 cup raw unsalted sunflower seeds (optional)
1/4 cup butter or 1/4 cup margarine, melted
2 teaspoons grated orange peel
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
1 1/3 cups dried cranberries

Steps:

  • Heat oven to 350°F Combine all ingredients except cranberries in large bowl; mix well. Spread evenly in 15 x 10-inch jelly roll pan.
  • Bake 40 minutes or until golden brown, stirring every 10 minutes.
  • Remove granola from oven; stir in cranberries. Cool completely in pan. Store tightly covered up to 2 weeks.
  • For Gift Giving: Spoon granola into airtight glass or plastic jars, canisters, cellophone gift bags (tie closed with ribbon) or empty oatmeal tubes. Ahead of time, paint designs on jars with paint markers or sponges and paint, cover oatmeal tubes with gift wrap, or decorate gift bags with holiday stickers.

3 1/2 cups rolled oats
1 1/2 cups dried cranberries
3/4 cup hazelnuts, chopped
1/2 cup sunflower seeds
3 teaspoons finely grated orange rind
1 1/2 teaspoons ground cinnamon
3/4 cup honey
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 160 C.
  • Combine oats, cranberries, hazelnuts, sunflower seeds, orange rind and cinnamon in a large bowl.
  • Place honey in saucepan over low heat.
  • Cook 30 seconds till honey is runny.
  • Stir in vanilla.
  • Add honey mix to oat mixture, stir to combine.
  • Spoon into large roasting pan.
  • Bake 20 - 25 minutes, stirring every 10 minutes till golden.
  • Set aside to cool completely.

This is from the December 2009 edition of Chatelaine magazine.It is a very versatile recipe as you can change the ingredients to your liking. It says to add the flax seed at the end but I put it in before I bake it,either way is fine.I omitted the salt and added vanilla extract along with the almond extract.I usually half this recipe and make 4 cups instead of 8.I use a combination of sunflower seeds,almonds and walnuts.

1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon nutmeg
3 cups oats (instant is fine)
1 cup oat bran or 1 cup wheat germ
1 cup sunflower seeds or 1 cup walnuts
1 cup coconut
3/4 teaspoon salt
2/3 cup maple syrup or 2/3 cup honey
1/3 cup vegetable oil (canola)
2 teaspoons almond extract
1 cup dried cranberries or 1 cup raisins
1/4 cup flax seed

Steps:

  • Preheat oven to 350°F.
  • Line a large baking sheet with parchment paper or foil.
  • In a small bowl,stir cinnamon with ginger and nutmeg.
  • In a large bowl,mix oats with oat bran,nuts,seeds,coconut and salt.
  • In a small saucepan over low heat,stir syrup with oil until warm about 2 or 3 minutes.
  • Remove from heat.
  • Stir in almond extract(& vanilla if using) and spice mix.
  • Pour over oat mixture.
  • Stir to coat.
  • Turn onto baking sheet,spreading evenly as you can.
  • Bake until golden brown for 30 minutes,stirring every 10 minutes.
  • Remove from oven and stir in cranberries.
  • Cool.
  • Store in airtight container for up to 2 weeks.( I store mine in the freezer).
  • Sprinkle with flaxseed before serving.
