1 large carrot, peeled and chopped
1 onion, chopped
2 cloves garlic, chopped
2 tablespoons chopped fresh thyme leaves
1 chipotle pepper in adobo, seeded and finely chopped, plus a tablespoon adobo sauce
1 (15-ounce) can crushed tomatoes
1 cup chicken stock
Tortillas or bread, for mopping

CHICKEN FLAUTAS WITH CHUNKY GUACAMOLE

Chicken Flautas With Chunky Guacamole image

Ole!!! Flautas are similar to taquitos, which are rolled tacos. These flautas use flour tortillas to give them light crispiness! The perfect accompaniment is chunky guacamole, with many of the same flavors from the flautas--enjoy!

Provided by Charmie777

Categories     Chicken

Time 25m

Yield 12 flautas

Number Of Ingredients 17

3 cups shredded cooked chicken
2 teaspoons lemon juice
1 teaspoon cumin
1 jalapeno, diced (more or less, to your taste)
2 tablespoons chopped cilantro
2 garlic cloves, minced
1/2 cup monterey jack cheese, shredded
salt and pepper
12 small flour tortillas (about 6 inch)
oil (for frying)
2 avocados
1/2 small red onion, diced (not too small)

4 tablespoons cilantro, chopped
2 teaspoons lemon juice
1/2 cup cherry tomatoes, halved (or a whole tomato, diced)
salt and pepper

  • Drain on paper towels and serve with Chunky Guacamole.
  • CHUNKY GUACAMOLE: Dice avocados into chunks and place in a medium bowl.
  • Add remaining guacamole ingredients, and gently toss to combine.

CHUNKY GUACAMOLE

Chunky Guacamole image

Provided by Food Network Kitchen

Number Of Ingredients 0

Steps:

  • Halve, pit and dice 3 ripe avocados. Combine in a bowl with 1/2 diced white onion, 1/2 cup chopped cilantro, 1 to 2 minced serrano chiles (seeded for less heat), the juice of 2 limes and 1 teaspoon kosher salt. Mash a few times until combined but still chunky. Stir in 1 diced tomato and season with more salt.

Tips:

  • Select ripe avocados: Use avocados that are ripe but not overripe. Ripe avocados will be slightly soft when gently squeezed.
  • Use fresh ingredients: Fresh ingredients will give your guacamole the best flavor. If possible, use ripe tomatoes, onions, and cilantro.
  • Don't over-mash the avocado: Guacamole should have a chunky texture, so don't over-mash the avocado. Use a fork or potato masher to gently mash the avocado until it is just combined with the other ingredients.
  • Add flavor enhancers: To add extra flavor to your guacamole, try adding some lime juice, cilantro, garlic, or jalapeno peppers.
  • Serve immediately: Guacamole is best served immediately after it is made. If you need to store it, cover it tightly and refrigerate it for up to 3 days.

Conclusion:

Chunky guacamole is a delicious and versatile dip that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you like it mild or spicy, chunky or smooth, there is a guacamole recipe out there for everyone. So next time you are looking for a quick and easy snack or appetizer, give chunky guacamole a try.
