Yield 4-6 serving(s)

Number Of Ingredients 11

1/2 cup margarita mix
1/4 cup soy sauce
1/4 cup vegetable oil
1/2 lemon, juiced
1 fresh garlic clove, chopped
1/4 cup fresh cilantro
1 teaspoon hot sauce (optional)
1/2 teaspoon cumin
1/2 teaspoon black pepper
4 -6 boneless skinless chicken breasts
lime wedges and cilantro (to garnish)

Steps:

  • Pound chicken breasts to even thickness. This is important!
  • Combine all ingredients in a blender except chicken.
  • Pour marinade over chicken and let sit in the fridge for at least 1 hour, up to 24 hours.
  • Preheat grill to medium-high heat.
  • Grill chicken breasts for 7-8 minutes per side, turning once. Since the thick parts have been flattened, the whole breast should develop a nice, caramelized texture without drying out.

Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs work best for this recipe. If using chicken breasts, pound them to an even thickness to ensure even cooking.
  • Make sure your marinade is flavorful: The marinade is what gives the chicken its flavor, so make sure it's packed with herbs, spices, and citrus. The recipe in the article uses a combination of cilantro, lime, garlic, cumin, and chili powder.
  • Don't overcook the chicken: Chicken is best when it's cooked through but still juicy. Overcooking will make the chicken dry and tough.
  • Serve the chicken with your favorite sides: Cilantro margarita chicken pairs well with a variety of sides, such as rice, beans, salad, or grilled vegetables.

Conclusion:

Cilantro margarita chicken is a delicious and easy-to-make dish that's perfect for any occasion. The marinade infuses the chicken with flavor, and the grilled chicken is juicy and tender. Serve it with your favorite sides for a complete meal that everyone will enjoy.
