This take on a crumble uses phyllo dough instead of oats. It's delicious with a dollop of yogurt or ice cream.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Time 1h10m

Number Of Ingredients 8

1 1/2 cups cranberries (fresh or partially defrosted frozen)
1 teaspoon cornstarch
1 teaspoon ground cinnamon
Coarse salt
1/2 cup honey
3 small or 2 large McIntosh apples (about 1 pound), peeled if desired, cored and cut into 1 1/2 inch wedges
2 tablespoons unsalted butter
6 sheets phyllo dough

Steps:

  • Heat oven to 375 degrees. In an 8-by-8-inch baking dish, toss cranberries with cornstarch, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Drizzle with 1/4 cup honey. Arrange apples on top of cranberries in one layer, skin sides down. Drizzle with 3 tablespoons honey. Sprinkle with 1/4 teaspoon cinnamon and 1/4 teaspoon salt.
  • Melt together butter, remaining honey, and remaining 1/4 teaspoon cinnamon. Working with one sheet of phyllo at a time and keeping the others covered with plastic wrap, brush very lightly with butter mixture. Lay a second sheet over first and brush with butter mixture. Repeat with one more sheet. Tear the phyllo crosswise into 4 pieces, and loosely crumple (as youwould a tissue) as you place on top of the apples. Repeat with remaining three sheets of phyllo and butter mixture.
  • Bake for 20 minutes, then reduce to 350 degrees. Bake until juices bubble in center and apples are tender, 40 to 50 minutes more. If top darkens too quickly, tent with foil. Cool 30 minutes.

APPLE-CRANBERRY CRUMBLE

Apple-Cranberry Crumble image

Original recipe is a twist on my Mom's version. Fast and easy dessert, great for fall season when apples are freshest and the cranberries come in. I have made it without the apples or using frozen cranberries. I enjoy it as a dessert and as a breakfast treat around the Thanks-Mas season. Loaded with antioxidants! I have also made a wheat-free version using nut flour. Serve plain or topped with ice cream, whipped cream, or a drizzle of heavy cream.

Tips:

  • Choose the right apples. For this recipe, you'll want to use a firm, tart apple that will hold its shape when baked. Some good options include Granny Smith, Honeycrisp, or Braeburn apples.
  • Don't overcook the apples. You want them to be tender, but not mushy. Cook them just until they start to soften and release their juices.
  • Use a good quality oatmeal. The oatmeal is what gives the crunch topping its texture, so make sure you use a good quality variety. Old-fashioned rolled oats are a good choice.
  • Don't skimp on the butter. The butter is what helps to brown the topping and give it a delicious flavor. Don't be afraid to use a generous amount.
  • Let the crunch topping cool slightly before serving. This will help it to set and become more firm.

Conclusion:

This cinnamon apple cranberry crunch is a delicious and easy-to-make dessert that is perfect for any occasion. The sweet and tart apples, the tangy cranberries, and the crunchy topping are all combined to create a truly irresistible treat. So next time you're looking for a special dessert, give this cinnamon apple cranberry crunch a try. You won't be disappointed.
