NEXT-DAY BAKED CINNAMON-APPLE FRENCH TOAST

Next-Day Baked Cinnamon-Apple French Toast image

We made this for Christmas morning this year (2009). My mother found the recipe in her local paper -- The Daily Breeze in Redondo Beach, CA. When I made it, I added in not just the apples, but all the liquid -- as a result the dish was more like bread pudding than french toast ... it was still great, and I'd make it that way again. But if you'd like a drier texture, don't add the apple liquid. I also swapped out the cinnamon and nutmeg for two teaspoons of Recipe #45672 .

Provided by KLHquilts

Categories     Breakfast

Time 1h30m

Yield 8 serving(s)

Number Of Ingredients 10

1/2 cup light brown sugar, packed
1 1/2 teaspoons cinnamon, ground
1/2 teaspoon nutmeg, ground
8 slices white bread (use Texas toast, that REALLY thick white bread)
8 eggs
1/2 cup granulated sugar
3 1/2 cups milk (original recipe calls for whole milk, I used 2%)
1 tablespoon vanilla (use the very best! Use Penzey's!)
6 apples (used a variety ( Jonagold, McIntosh, your favorites)
2 tablespoons unsalted butter (plus more to grease pan)

Steps:

  • Peel, core and cut apples into 1/4" thick slices. Heat butter in a saute pan until foamy; add apples and cook until tender (about 10 minutes).
  • Turn off heat and stir in brown sugar, cinnamon and nutmeg. Set aside.
  • Toast bread. Cut slices in half on the diagonal, making triangles.
  • Butter a 13x9 baking dish and arrange bread triangles in 2 rows, overlapping. (There was no photo for this, and I couldn't figure out the best way to do it -- I ended up with an arrangement that looked like two Flying Geese quilt borders, going opposite directions.).
  • Beat eggs in a medium bowl; add sugar, milk and vanilla and beat well. Pour custard mixture over bread. Spoon apples over top. Cover and refrigerate over night.
  • The next morning, heat oven to 350. Uncover baking dish and bake 60 minutes, until custard is set and doesn't shimmy when you tap it.
  • Let dish rest for 10 minutes when you take it out of oven. The original recipe says to serve in squares -- hah! Serve by spoonful; there wasn't any chance that I was going to get this out of the pan in nice, neat squares. Serve with honey butter, maple syrup, or nothing -- it's quite sweet, and the apples create a lovely topping.

APPLE AND SAUSAGE FRENCH TOAST CASSEROLE WITH CINNAMON SYRUP

Apple and Sausage French Toast Casserole with Cinnamon Syrup image

The aroma from this dish is divine! What a wonderful - and festive - way to start your day.

Provided by Jackie Mento

Categories     Breakfast Casseroles

Time 1h15m

Number Of Ingredients 20

FRENCH TOAST
1 lb loaf of challah or french bread, cubed
8 oz cream cheese, softened
1/3 c brown sugar, packed
1 1/2 tsp cinnamon
6 eggs, slightly beaten
2 c whole milk
1 tsp pure vanilla extract
1/2 c seedless raisins
5 oz dried apples, diced
1 granny smith apple, peeled and chopped
1 lb breakfast sausage, cooked and crumbled
CINNAMON SYRUP
1 c brown sugar, packed
3/4 tsp cinnamon
1/8 tsp salt
1 c water
1 Tbsp corn starch
1 tsp pure vanilla extract
2 Tbsp unsalted butter

Steps:

  • 1. Spread cubed bread in a single layer on 2 sheet pans and bake in a 325 degree oven for about 15 minutes. Cool slightly then transfer bread into a greased 9 by 13 inch baking pan.
  • 2. In a large bowl, mix cream cheese, brown sugar and cinnamon. Add eggs, milk, and vanilla.
  • 3. Sprinkle the raisins, dried apples, chopped apple and the sausage over the bread. Now pour the egg mixture over the bread. With a spoon, gently push the bread down until it is soaked.
  • 4. You can bake it now or cover with foil and refrigerate overnight to bake in the morning.
  • 5. If you are baking it in the morning leave the casserole at room temperature while the oven preheats. Bake uncovered at 350 degrees F, for 35 - 45 minutes just until the center is set.
  • 6. While the french toast is baking, prepare the cinnamon syrup. Combine the brown sugar, cinnamon, and salt in a small saucepan. Combine the water and corn starch in a measuring cup then pour into the pan.
  • 7. Cook over medium heat and bring to a rolling boil, stirring often. Remove from heat and add the vanilla extract and butter. It will be the consistency of syrup.
  • 8. When the french toast is out of the oven drizzle some syrup over it and serve the rest on the side. By now everyone has smelled it cooking and they will be ready to eat! Serve hot.

1 teaspoon Vanilla (2 tsps)

5-6 medium cooking apples, e.g. Gala

Mix together the remaining sugar (1/2 cup), cinnamon, nutmeg, ginger and cloves and sprinkle half of the mixture over the apples. *** Pour the remaining milk/egg mixture over the apples and sprinkle with remaining sugar mixture. Dot with butter, cover and refrigerate overnight. Bake uncovered at 350 degrees for 1 hour or until a toothpick inserted in center comes out clean. It will rise high and brown. APPLE-CINNAMON OVERNIGHT FRENCH TOAST

APPLE-CINNAMON OVERNIGHT FRENCH TOAST image

Categories     Fruit     Brunch

Number Of Ingredients 14

1 loaf challah, sliced 1" thick
3-5 apples, sliced
2 cups dark brown sugar
8 eggs
3/4 cup butter
1 1/2 cups milk
1/2 cup half & half
3 tablespoons maple syrup
1 1/2 teaspoons vanilla
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 teaspoon nutmeg
2 tablespoons Grand Marnier

Steps:

  • Combine the syrup, butter and brown sugar in a saucepan and simmer gently until the sugar melts. Pour this mixture into the bottom of a greased 9x12" casserole dish. Layer the apples over the sugar mixture, sprinkle with cinnamon, and place the bread slices over the apples. Beat together the eggs, milk, half & half, vanilla, spices, and Grand Marnier. Pour the custard over the bread. Cover the dish and let stand overnight in refrigerator. The following morning, preheat oven to 350F. Uncover the casserole dish and bake for approximately 40-45 minutes.

Tips:

  • Use fresh apples: Fresh apples provide the best flavor and texture for this dish. If you only have access to store-bought apples, choose a variety that is crisp and tart, such as Granny Smith or Honeycrisp.
  • Slice the apples thinly: This will help them cook evenly and quickly. If you slice the apples too thickly, they may not cook through before the French toast burns.
  • Use a good quality bread: A sturdy bread, such as challah or brioche, will hold up well to the egg mixture and not get soggy. If you are using a thinner bread, such as white bread, you may need to cook it for a shorter amount of time.
  • Don't overcrowd the pan: When cooking the French toast, make sure to leave enough space between each slice so that they can cook evenly. If you overcrowd the pan, the French toast will steam instead of fry and will not be as crispy.
  • Serve immediately: French toast is best served immediately after it is cooked. If you need to keep it warm for a short period of time, you can place it in a warm oven (200 degrees Fahrenheit) or on a warming tray.

Conclusion:

Cinnamon apple French toast is a delicious and easy-to-make breakfast or brunch dish. It is perfect for a special occasion or a lazy weekend morning. With a few simple ingredients and a little bit of time, you can create a dish that is sure to please everyone at the table.
