- Spray a 13 by 9-inch baking pan with nonstick cooking spray.
- Melt butter in a large pot over medium heat. Quickly stir in the marshmallows and cook until completely melted. Remove from heat.
- Stir in cereal, and dried fruit and seeds if using, until well coated and combined. Spray a rubber spatula or wooden spoon with nonstick cooking spray and press mixture evenly into pan. Cool and cut into 2 by 2-inch squares or use cookie cutters to cut into playful shapes. Pack in an airtight container.

- Bring water to a boil in a saucepan. Stir rice, butter, and salt into water until the butter melts. Cover saucepan and remove from heat. Set aside until water is absorbed, about 5 minutes.
- Stir milk, brown sugar, cornstarch, and vanilla extract into the rice; bring to a simmer over medium heat while stirring; cook until the rice has the consistency of loose oatmeal, about 5 minutes. Ladle pudding into bowls and dust with cinnamon.

CINNAMON BROWN SUGAR RICE KRISPIES TREATS
Rice Krispie treats are a staple in most childhood memories. This recipe gives them a grown-up makeover. The rice cereal is coated in a buttery marshmallow mix. This version adds brown sugar and cinnamon to the butter which packs a ton of flavor in each treat. They're gooey with a little spice from the cinnamon. They remind us of a snickerdoodle Rice Krispie treat. Kids big and small will go crazy for these.

- In a medium-large pot, on low heat, melt the butter. Then add the brown sugar and cinnamon.
- When the brown sugar is completely dissolved, add your marshmallows.
- Stir continuously until marshmallows are melted and the mixture is sticky. (This could create cramps in your hand, so stir slowly if need be.)
- Remove from heat and start adding the cereal. Mix until well coated. (I usually add 1 cup at a time for ease.)
- Spray your pan or chosen dish (I sometimes use fun molds) with cooking spray. Spoon your treats into the pan. (I usually spray one of my hands with the cooking spray so that I can mold the treats easier.)
- Sprinkle some more cinnamon on top (if desired) and let cool for 15-20 minutes. Cut into 2-inch squares and serve.
CARAMELIZED BROWN BUTTER RICE KRISPIES TREATS
This absurdly easy recipe came to The Times from Colin Alevras, then the chef at the Tasting Room in New York, which, until it closed in 2008, offered Rice Krispies treats every day, and made more for Halloween. Browning the butter elevates these plebeian snacks into something more toothsome, and it adds just an extra couple of minutes to the process. They're so good. (The original recipe called for one bag of marshmallows, but after retesting, we've updated it to call for two bags. This should yield a chewier, gooier treat.)

- Line rimmed sheet pan with parchment paper or wax paper, or butter it well.
- In a large pot, melt butter over medium-low heat. It will melt, then foam, then turn clear golden and finally start to turn brown and smell nutty. Watch closely and stir often.
- When butter is evenly browned, stir in marshmallows. (If using unsalted butter, stir in 1/8 teaspoon salt.) Melt and cook, stirring often, until mixture turns pale brown, then stir constantly until lightly browned but not dark, 3 to 5 minutes.
- Turn off heat, add cereal, and mix well, preferably with a silicone spoon or a spatula. Scrape into prepared pan and press down lightly. If necessary, butter hands to press mixture flat. Let cool, and cut into squares or bars.

- Melt butter in a saucepan over medium heat, stirring constantly, until golden brown and has a nutty aroma, about 5 minutes. Add marshmallows to browned butter, reduce heat to medium-low, and cook, stirring occasionally, until marshmallows are melted, 3 to 4 minutes.
- Stir bourbon and 1 teaspoon sea salt into marshmallow mixture and remove saucepan from heat. Add rice cereal to marshmallow mixture and mix until cereal is evenly coated with marshmallow mixture; transfer to a 9x13-inch baking dish.
- Place a sheet of parchment paper over rice cereal mixture and press into dish. Remove parchment paper and sprinkle flaked sea salt over the top. Cool treats to room temperature, at least 30 minutes.
