3/4 cup soft butter or 3/4 cup margarine
2/3 cup granulated sugar
2/3 cup brown sugar
1 large egg
1 teaspoon vanilla
2 ripe bananas, mashed
2 cups flour (I prefer whole wheat flour)
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk chocolate chips

Steps:

  • Preheat oven to 350°.
  • Spray 9x13 pan with cooking spray.
  • In a large mixing bowl, cream butter, granulated sugar, and brown sugar.
  • Add egg and vanilla and mix well.
  • Stir in mashed bananas.
  • Add flour, baking powder, and salt.
  • Mix well. Stir in chocolate chips.
  • Pour into prepared 9x13 pan.

1 very ripe banana
1 cup Bisquick™ Complete pancake & waffle mix
1/2 cup vanilla protein powder
1 egg
2 tablespoons brown rice syrup or real maple syrup
1/2 cup miniature semisweet chocolate chips
1 bag (2 oz) pecan chips
1/2 cup Betty Crocker™ Rich & Creamy vanilla frosting (from 1-lb container)
18 dried banana chips, if desired

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray.
  • In medium bowl, beat banana with electric mixer on medium speed until pureed. Add Bisquick mix, protein powder, egg and syrup; beat until well combined. Stir in chocolate chips and half of the pecan chips. Spread in pan. Sprinkle with remaining pecan chips.
  • Bake 18 to 25 minutes or just until center is set. Cool completely in pan on cooling rack, at least 30 minutes. Cut into 3 rows by 3 rows. Remove bars to cooling rack or plate.
  • Spoon frosting into small resealable freezer plastic bag; microwave on High 10 to 15 seconds. Cut off tiny corner of bag; squeeze bag to drizzle frosting over bars. Gently press 2 dried banana chips on top of each bar.

½ cup shortening
1 cup white sugar
½ cup milk
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 very ripe banana, mashed
1 teaspoon lemon juice
½ cup chopped walnuts
2 tablespoons butter, melted
1 teaspoon vanilla extract
2 cups confectioners' sugar
½ ripe banana
½ teaspoon salt
¼ teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, cream together the shortening and sugar until smooth. Stir in the milk and 1 teaspoon vanilla. Combine the flour, baking soda and 1/2 teaspoon salt; stir into the sugar mixture. Mix in 1 banana, 1 teaspoon lemon juice and walnuts. Spread evenly into the prepared pan.

This is my adaptation of a recipe I found in the April 2002 issue of the now-defunct BHG Hometown Cooking magazine. They disappear almost instantly whenever I make them. I like them because the fruit isn't mashed and incorporated into the batter as it is in most banana recipes.

2 cups all-purpose flour
2 cups rolled oats
2/3 cup finely chopped toasted almond (optional)
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups packed brown sugar
1 cup butter, softened
4 medium bananas, quartered lengthwise and sliced (3 cups)
1 cup cinnamon baking chips (or whatever flavor you like)

Steps:

  • Preheat oven to 350°F.
  • In a medium bowl, combine the flour, oats, nuts (if using), baking soda, and salt; set mixture aside.
  • In a large mixing bowl, beat the brown sugar and butter with a mixer until light and fluffy.
  • Beat the flour mixture into the butter mixture until combined.
  • Press half of the oat mixture into the bottom of an ungreased 13x9-inch baking pan.
  • Bake in preheated oven for about 15 minutes, or until the crust turns golden brown.
  • Remove from the oven.
