1 medium pink grapefruit
1/4 cup lemon juice
1/4 cup lime juice
2 tablespoons honey
1 tablespoon snipped fresh dill or 1 teaspoon dill weed
1 teaspoon crushed red pepper flakes
2 teaspoons minced fresh gingerroot
4 tuna steak or fillets (6 ounces each)

Steps:

  • Peel and section grapefruit over a bowl, reserving juice. Refrigerate half of the grapefruit sections. Add remaining grapefruit to the reserved grapefruit juice. Add the lemon juice, lime juice, honey, dill, red pepper flakes and ginger. Remove 1/4 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add the tuna steaks. Seal bag and turn to coat; refrigerate for 30 minutes, turning once., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill tuna, uncovered, over medium heat or broil 4 in. from the heat for 6-7 minutes on each side, basting frequently with reserved marinade. , Top tuna steaks with reserved grapefruit sections. 1/4 cup white wine vinegar

  • In a bowl, combine all ingredients for marinade.
  • Pour 1/2 cup marinade into a large ziplock baggie and add tuna.
  • Seal bag and be sure tuna is fully coated in marinade.
  • Refrigerate for 2 hours. (Careful not to over-marinate the fish- the acidity will cook it if marinated too long!).
  • Cover and refrigerate remaining marinade.

1 lemon zested
1 orange, zested
2 large cloves garlic, very finely chopped
2 pounds tuna steaks
2 sprigs fresh rosemary, leaves chopped

Extra-virgin olive oil, for drizzling
1 lemon, juiced

  • Gremolata:
  • Before cooking the tuna, combine the parsley, lemon zest and orange zest in a small bowl. Stir in the finely chopped garlic and reserve.
  • Cut the tuna into bricks about 3 inches long and 2 inches wide, 3 pieces per portion. Season the tuna with rosemary, salt and pepper, to taste. 2 medium oranges, juiced
1 medium lime, juiced
1 medium lemon, juiced
¼ cup diced red onion
2 tablespoons minced habanero pepper
1 teaspoon cider vinegar
1 teaspoon minced garlic
1 pinch dried oregano
½ cup cubed mango
¼ cup diced red onion
1 tablespoon minced fresh cilantro
salt and ground black pepper to taste
2 (4 ounce) tuna steaks
salt and freshly ground black pepper to taste
5 ounces kettle-cooked potato chips
2 tablespoons unsalted butter
1 tablespoon sweet chili sauce
1 cup hot cooked jasmine rice

Steps:

  • Prepare marinade: Whisk orange juice, lime juice, lemon juice, red onion, habanero pepper, vinegar, garlic, and oregano together in a bowl large enough to hold the tuna steaks.
  • Prepare salsa: Combine mango, red onion, cilantro, salt, and pepper in a separate bowl. Set aside.

3 tablespoons vegetable oil
six 6-ounce 1-inch-thick tuna steaks
