ROASTED CITRUS-SOY CHICKEN WINGS
Another recipe I found on MyGourmetConnection.com that sounds so good. Here is what is stated about the recipe: " These oven-roasted wings get plenty of flavor from a marinade of orange juice, soy sauce, sriracha and garlic. Serve by themselves, or with a little bit of sweet Thai chili sauce for dipping." Update 10/13/2013: I have now made these deliciously different wings and loved them. I still made a batch of baked buffalo wings for DH but I just ate these wings. The only change I made was to decrease the oven temp to 425 degrees, as mine seemed to be getting very caramelized/charring at 450.

Steps:
- Preheat oven to 450 degrees.
- In a large bowl, toss chicken together with olive oil, salt, and half of the lime and lemon zests. Spread in an even layer on a rimmed baking sheet. Transfer to oven and roast until golden brown, draining fat and shaking pan occasionally, about 1 hour.
- Meanwhile, slice the top and bottom of oranges with a paring knife. Set one of the flat sides on your work surface. From top to bottom, following the curve of the fruit, cut away peel and white pith. Trim off any remaining pith. Holding the oranges over a bowl, cut along both sides of each segment, staying close to the membrane, to release. Chop oranges and place in a fine mesh sieve in a bowl, to drain, pressing down on oranges to release juice as necessary; set aside.
- In a medium saucepan heat sugar and 1 teaspoon water over medium-high heat and cook, stirring occasionally and brushing down the sides of the saucepan with a damp pastry brush, until the sugar dissolves and comes to a boil. Cook until mixture becomes golden amber in color; remove from heat and add orange juice. Return mixture to heat and cook until reduced by half, about 4 minutes. Stir in corn syrup and continue cooking until thickened, about 1 minute more. Add orange pieces and cook until liquid is reduced and mixture is thick, about 3 minutes; remove from heat.
- Remove chicken from oven and transfer to a large bowl. Pour over citrus glaze and toss to coat. Stir in remaining lime and lemon zest, ginger, Sriracha, and cayenne pepper; serve immediately.
Tips:
- To make the most flavorful wings, use a combination of fresh orange juice, lemon juice, and lime juice. This will give the wings a bright and citrusy flavor. - If you don't have fresh citrus juice, you can use bottled juice instead. Just be sure to use 100% juice and not a juice cocktail. - Be sure to pat the wings dry before cooking them. This will help the glaze stick to the wings and prevent them from becoming soggy. - For a crispy glaze, bake the wings in a single layer on a baking sheet. If you crowd the wings, they will not cook evenly. - Keep an eye on the wings while they are baking and baste them with the glaze every 10-15 minutes. This will help to keep the wings moist and flavorful. - Once the wings are cooked through, remove them from the oven and let them cool for a few minutes before serving. Conclusion:
Citrus soy glazed wings are a delicious and easy-to-make appetizer or main course. They are perfect for parties or game day gatherings. With their sweet, tangy, and savory flavor, these wings are sure to be a hit with everyone who tries them. So next time you are looking for a new wing recipe, give these citrus soy glazed wings a try. You won't be disappointed!
