24 large clams
2 tablespoons olive oil
1 tablespoon butter
½ cup minced onion
¼ cup chopped green bell pepper
2 cloves garlic, minced
1 cup dried bread crumbs
4 slices bacon
½ teaspoon dried oregano
2 tablespoons grated Parmesan cheese
2 teaspoons dried parsley
¼ teaspoon paprika
2 tablespoons olive oil

Steps:

  • In a small skillet, cook bacon until crisp over medium heat. Crumble, and set aside.
  • Wash clams. Place on a baking sheet. Heat in a preheated 350 degree F (175 degree C) oven for 1 to 2 minutes, or until clams open. Discard any that do not open. Remove meat from shells. Chop, and set aside.
  • Add 2 tablespoons oil and butter to a small skillet, and place pan over medium heat. Add onion, pepper, and garlic; saute until tender. Remove from heat, and cool.
  • In a medium bowl, combine bread crumbs, bacon, oregano, cheese, sauteed vegetables, and chopped clams. Mix well. Fill clam shells with mixture, and place on baking sheet. Sprinkle with parsley and paprika. Drizzle with olive oil.
  • Bake at 450 degrees F (230 degrees C) for 7 minutes. Serve.

1/2 cup chopped red bell pepper
1/2 cup chopped shallots
1 tablespoon chopped garlic
1 cup butter
1 teaspoon sea salt
1/2 teaspoon fresh ground pepper and a pinch of cayenne pepper

2 tablespoons lemon juice

5 strips of double cut bacon, partially cooked
24 topneck clams on the half shell, arranged on a bed of rock salt

Steps:

  • Saute the peppers, shallots and garlic in a medium saute pan briefly in 2 tablespoons of the butter to soften slightly (1 minute maximum). Season this mixture with salt, cayenne and fresh pepper and remove to a plate to cool off. Blend the butter, the cooled off vegetables, parsley and lemon juice in a bowl. Dab a generous amount of this butter mix on each clam, sprinkle with fresh bread crumbs and top with a small piece of bacon. Run under the broiler to heat the clams and brown the bacon. You could also bake the clams in a 425 degree oven for 5 minutes to obtain the same result.

1/3 cup freshly grated Parmesan cheese

Steps:

  • For the topping: Heat a small skillet over medium heat. Add the olive oil and breadcrumbs and toast, stirring often, until golden brown and crispy. Season with the salt. Set aside to cool. Stir in the Parmesan.
  • For the pasta: Bring a large pot of salted water to a boil. Cook the pasta for 3 minutes less than the package directions, about 9 minutes. Drain well, reserving 1/2 cup pasta water.
  • Put the olive oil and bacon in a large skillet over medium heat. Cook, stirring often, until browned and crispy, about 8 minutes. 1/4 pound pancetta, sliced into thin strips
1/4 cup minced red onion or shallot
1 teaspoon minced garlic
1 tablespoon lemon juice
1 teaspoon crab boil seasoning (recommended: Old Bay)
2 tablespoons butter, softened
1 tablespoon minced fresh parsley
24 littleneck clams, shucked and kept in bottom shell
1/4 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • In a saute pan over medium-high heat, add the oil and heat to the verge of smoking. Add the pancetta, reduce the heat to medium, and cook the pancetta until crispy, 2 to 3 minutes. Once cooked, remove the pancetta with a slotted spoon to paper towels and reserve. Add the onions and garlic and cook until translucent, 6 to 7 minutes. Once the onions are cooked, remove from the pan and toss in a bowl with the lemon juice, crab boil seasoning, butter, and parsley. 2 medium onions - chopped
1 large green bell pepper - chopped
l large celery stalk - chopped
3 can(s) minced clams with juice, reserve juice.
1 roll of ritz crackers, crushed

  • 1. Saute butter, onion, pepper and celery. Add clams with a little liquid. Cruah crackes and add to clam mixture. This could be put in small clam shells or in a small casserole dish. sprinkle the crumbled bacon over the mixture.
  • 2. Turn oven on to 350 Degrees. Place dish or clamshells on a cookie sheet in the oven and bake for 25 to 35 minutes. When you take the casserole from the oven and put it on the table, put a few crackers around it and use the caaerole as a hot dip, it is great!

  • In a heavy skillet cook the bacon over moderate heat, stirring, until it begins to brown but is not crisp, transfer it with a slotted spoon to paper towels to drain, and discard the fat from the skillet. In the skillet, wiped clean, cook the onion and the garlic in the oil over moderately low heat until they are softened, add the bell peppers and the orégano, and cook the mixture, stirring, until the bell peppers are crisp-tender. Transfer the mixture to a small bowl and stir in the bacon, the vinegar, the Parmesan, and salt and black pepper to taste. The bell pepper mixture may be made 1 day in advance and kept covered and chilled.

  • Cook the bacon in skillet until crisp.
  • Drain excess fat, roughly chop, and set aside.
  • Next, mix the softened butter, shallots, garlic, parsley, lemon juice, salt and cayenne until combined well.
  • Arrange the clams in your largest skillet in a single layer.
  • Please feel free to steam the clams in batches if they don't all fit in your pan.
  • Add a cup or so of water, cover, bring to a boil, and steam clams until their shells just begin to open.
  • Remember, the clams will be finished under the broiler, so don't let them go too long in the pan after they begin to open!

2 Tbs. unsalted butter
1/2 cup finely chopped red bell pepper
1/3 cup finely chopped shallot
1/4 cup dry white wine or vermouth
1/2 cup coarse fresh breadcrumbs
1/4 cup finely grated Parmigiano-Reggiano
1/4 cup finely chopped fresh flat-leaf parsley
Freshly ground black pepper
3 slices bacon, sliced crosswise 1/4 inch thick
Lemon wedges, for serving

Steps:

  • Position a rack in the center of the oven and heat the broiler on high. Arrange the clams on a heavy-duty rimmed baking sheet. Broil until they open, 5 to 7 minutes, removing each clam with tongs as it opens and transferring it to a clean rimmed baking sheet to cool. Once all the clams have opened, collect any spilled clam juice from the first baking sheet in a measuring cup. When the clams are cool enough to handle, discard the top shells: Pick up a clam; holding the bottom shell and keeping the clam level, twist off the top shell. 2 dozen littleneck clams, scrubbed, shucked, left on the half shell

Steps:

  • Arrange a rack in center of oven; preheat to 500°F. Cook bacon in a large skillet over medium heat, turning occasionally, until golden and crisp, 5-7 minutes. Transfer bacon to paper towels, reserving fat in skillet. Let cool, then break into 1/2" pieces.

1 green bell pepper
1 red bell pepper
1 small red onion
¼ cup Italian-style dry bread crumbs
2 cloves garlic, peeled
1 teaspoon sea salt

1 teaspoon dried oregano, crushed
1 tablespoon butter
4 slices bacon, cut into 1 inch pieces

Steps:

  • Shuck clams from shell. Clean shells thoroughly. Place each clam onto a clean 1/2 shell; set aside.
  • Preheat broiler for medium heat.

6 ounces andouille sausage
1 tablespoon vegetable oil
1 stick unsalted butter, at room temperature
2 tablespoons finely minced garlic
1 tablespoon minced parsley leaves, plus more for garnishing
1 teaspoon Essence, recipe follows
1/2 lemon, juiced
1/2 cup bread crumbs
2 slices thick-cut bacon, each cut into 12 pieces
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Hold the clams in a cloth and insert a knife between the shells. Pry the shells apart, then sever the hinge muscle and discard the top shell. Loosen the muscle in the lower shell. Put clams on a baking sheet and cover with plastic wrap; refrigerate until topping is prepared.
  • Put the andouille in a food processor and process until finely chopped. Heat the vegetable oil in a small saute pan and, when hot, add the sausage. Cook, stirring frequently, until browned and the fat is rendered. Transfer to a mixing bowl and allow to cool.

  • Remove the clams from the refrigerator and remove the plastic wrap. Top each clam with a pat of the garlic butter, then divide the bread crumbs evenly among the clams. Top each clam with 1 piece of the bacon and broil until the bacon is crispy and the clams are cooked through, about 5 to 6 minutes.
  • Remove from the oven. Arrange the clams on a platter and garnish with more parsley. Serve hot or warm.

My stepfather-in-law made Clams Casino as an hors d'oeuvre for Thanksgiving 2007. I liked his version so much that I had to make something similar for my annual 2007 Christmas hors d'oeuvres party for my friends. He used bread crumbs in his topping, which is non-traditional in Clams Casino, but gives the dish a toasted texture and flavor. I took my best guess at his recipe, doubled it in order to serve 12 and added a few extra flavors for zing. It was a success with the seafood lovers at the party--especially my husband!

12 cherrystone clams
1/4 cup butter
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup red pepper, chopped
1 garlic clove, minced
1 tablespoon lemon juice, fresh
1 tablespoon Worcestershire sauce
1/8 teaspoon red pepper flakes
1/4 teaspoon black pepper, freshly ground
1/4 cup breadcrumbs, dried, unseasoned
4 slices bacon, cooked until crisp and crumbled
rock salt (or coarse sea salt)

Steps:

  • Under cold running water, rinse clams and scrub with a soft-bristled brush to remove as much sand as possible. (Note: Clams should be tightly closed or snap shut when touched or placed under cold water. If any are already open and do not close after manipulation, discard those particular clams immediately to prevent food poisoning.).
  • In an oven-proof shallow dish (pie plate works best), pour in rock salt. Cover bottom of dish evenly with rock salt until 1/4-inch thick.
  • Steam clams until shells begin to open. Carefully remove each clam from steamer and set aside, reserving as much of the juice as possible in the bottom half of each shell.
  • Allow clams to cool until manageable to handle; then carefully break off top half of shell. With a knife, gently separate meat from where it is attached to shell. Then nestle the half of the shell with clam and juice into rock salt, arranging in the best way possible to fit into the baking dish. (Note: This helps keep clam upright and saves juice from spilling out. Plus it makes for a nice presentation!).
  • Preheat oven to 500 degrees.
  • In a large skillet over medium heat, melt butter. Add onion, celery, red pepper and garlic to skillet and sauté until tender.
  • Remove skillet from heat and stir in lemon juice, Worcestershire sauce, red pepper flakes, pepper and crumbled bacon.
  • Sprinkle bread crumbs a little at a time into skillet, stirring into mixture until moisture is absorbed. Use a little less or more of the bread crumbs until desired consistency is met.
  • Spoon a scant amount of the mixture onto each clam.
  • Bake for 6-8 minutes or until clams are just cooked through and topping is golden.
  • Serve immediately.

My husband John made this recipe. After not finding just what he wanted on the internet, he made his own.

1/2 c bacon, diced fine
1 1/2 Tbsp white wine, dry
1/4 c red bell pepper, diced fine
2 Tbsp shallots, minced
1 clove garlic, minced
1/2 c bread crumbs, dry
1 Tbsp parmesan cheese
1 tsp parsley
1/4 tsp pepper
12 clams, cherrystone
lemon wedges (optional)
clam juice

Steps:

  • 1. Partially steam clams just to get them to open (about 2 mins). Carefully shuck clams (remove top shell)
  • 2. Heat a medium skillet over medium heat. Coat pan with cooking spray.
  • 3. Add bacon to pan, cooking until bacon begins to brown, stirring occasionally.
  • 4. Add wine. Cook until liquid evaporates (about 30 seconds), scraping to loosen browned bits.
  • 5. Add bell pepper, shallots & garlic to pan. Cook 4 mins or until tender. Place mixture in a medium bowl.
  • 6. Add breadcrumbs, cheese, parsley & black pepper to bacon mixture. Stir until blended.
  • 7. Cover a baking sheet with foil.
  • 8. Take a very sharp knife and make 2 small slits across each clam. Drizzle with a little clam juice to keep them from drying out.
  • 9. Place each clam in shell on the foil. ** TIP: To keep them from moving & tipping, simply take a small bowl of sea salt and add a tiny bit of water to just moisten the salt & make it clumpy. Place a small mound on the foil & place a shell on the salt mound. It will stay put better.
  • 10. Top each clam with an equal amount of the bacon mixture.
  • 11. Broil until tops are browned and clams are done. Serve with lemon wedges if desired.

2 tablespoons unsalted butter
4 ounces smoked bacon, chopped
1/4 cup minced shallot
2 tablespoons minced garlic
3 ounces (6 tablespoons) dry vermouth
1/2 cup seasoned breadcrumbs
1/3 cup grated Parmesan cheese
1/3 cup minced parsley
16 cherrystone clams, scrubbed
Fresh lemon juice

Steps:

  • For the stuffing: Over medium heat, melt butter in a heavy bottom skillet until it starts to foam. Add bacon, shallots, and garlic and cook until bacon is cooked and vegetables are translucent, about 6 minutes. Pour in vermouth and stir, scraping bottom of skillet. Reduce heat to low. Add breadcrumbs, Parmesan and parsley. Cook until mixture comes together, approximately 5 to 6 minutes. Remove from heat and set aside.
  • For the clams: Preheat broiler. Place clams on a sheet tray and place them on the middle rack in the oven. Broil until all of the clams have opened, 6 to 8 minutes. Remove from oven, discard top shells and release clam meats from bottom shells. Add clam "liquor" (juices) to the stuffing.
  • Spoon about 1 teaspoon stuffing into each clam shell, covering the clam meats. Place clams back in the oven on the middle rack and broil until stuffing is golden brown, approximately 2 to 3 minutes. Garnish with fresh lemon juice and serve.

100 little neck clams (shucked and rinsed well to get rid of any shell residue). ok, the worst part is over. discard the top shell and leave the clam in the bottom shell.
1/2 stick butter
olive oil
2-3 clove garlic, minced
1-2 lemons
1/2 yellow pepper -minced
1/2 lb bacon cut into 1 inch pieces
pepper and parsely flakes

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Place clams (in their half shell) in jelly roll pans or any type of roasting pans - just make sure the pan has a lip so juices don't run off.
  • 3. In a medium sauce pan melt the butter and then add the equivalent amount of the olive oil - about 1/4 cup.
  • 4. Add the garlic, parsley, pepper, juice from the lemons and yellow pepper to the butter/oil. Cook until the pepper becomes slightly soft.
  • 5. Meanwhile - place the bacon on a paper towel covered plate, cover with another paper towel and microwave. The bacon should be cooked but still soft - not crunchy. You'll have to do this in a few batches.
  • 6. Top each clam with 1/2 tsp. of the sauce and then top with one piece of bacon.
  • 7. Cook for approximately 8 minutes. Serve immediately. They will be gone in no time! ;-)
