6 tablespoons mayonnaise
1/4 cup coarsely chopped fresh chives, divided
6 slices toasted white bread (such as Wonder Bread or Martin's potato bread)
1 pound very ripe multicolored tomatoes, sliced 1/4" thick
1 1/2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
1 teaspoon sugar (optional)

Tips:

  • Use fresh eggs: Fresh eggs will produce the best mayonnaise. Make sure the eggs are clean and free of cracks.
  • Use a food processor or blender: A food processor or blender will make it easier to emulsify the ingredients and create a smooth mayonnaise.
  • Start with a small amount of oil: Gradually add more oil as you blend until you reach the desired consistency.
  • Add acid: Acid, such as lemon juice or vinegar, will help to balance the richness of the mayonnaise and prevent it from becoming too heavy.
  • Season to taste: Add salt and pepper to taste. You can also add other seasonings, such as garlic, herbs, or spices.
  • Use mayonnaise immediately or store it in the refrigerator for up to 2 weeks: Mayonnaise is best used fresh, but it can be stored in the refrigerator for up to 2 weeks.

Mayonnaise is a versatile condiment that can be used in a variety of dishes. It is easy to make at home and can be customized to your own taste. With a few simple ingredients and a little bit of time, you can create a delicious mayonnaise that will enhance the flavor of your favorite foods.
