6 tablespoons mayonnaise
1/4 cup coarsely chopped fresh chives, divided
6 slices toasted white bread (such as Wonder Bread or Martin's potato bread)
1 pound very ripe multicolored tomatoes, sliced 1/4" thick
1 1/2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
1 teaspoon sugar (optional)

Steps:

  • Combine mayonnaise and 2 Tbsp. chives in a small bowl. Spread each toast with 1 heaping Tbsp. chive-mayonnaise. Divide tomato slices among toasts and sprinkle each with salt, pepper, and sugar, if using. Top with remaining 2 Tbsp. chives.

This traditional Spanish snack couldn't be easier to make. Aside from good toasted bread, it requires very few ingredients: a garlic clove, a ripe tomato, some olive oil and flaky sea salt. In fact, the ingredient list is actually the recipe in shorthand. If you want a slightly more elaborate toast, garnish with anchovy fillets, slices of avocado or grilled shrimp. But even in its simplest form, this rustic toast is always satisfying.

2 slices of bread from a plain rustic loaf, about 1/2-inch thick
1 garlic clove, peeled
1 small ripe red tomato, halved, seeds squeezed out
1 tablespoon extra-virgin olive oil
Flaky sea salt or fleur de sel

Steps:

  • Toast the bread on both sides under the broiler, on a stovetop grill or over coals, until it is perfectly browned, with a bit of give in the center, about 1 minute per side.
  • Pressing down firmly, rub the top of each toast with the garlic. Press the tomato, cut side down, against the toast. Rub to moisten the toast and give it a juicy red color.
  • Drizzle with olive oil and finish with a tiny sprinkle of sea salt. Serve immediately.

1 garlic clove, finely grated
1/2 cup mayonnaise
Kosher salt
1/2 lemon
4 3/4"-thick slices country-style bread, toasted
3 medium tomatoes, thinly sliced
2 Tbsp. finely chopped chives
2 tsp. toasted sesame seeds
Flaky sea salt
Freshly ground black pepper
Aleppo-style pepper (for serving; optional)
Extra-virgin olive oil (for drizzling)

Steps:

  • Mix garlic and mayonnaise in a small bowl. Squeeze about 1 tsp. juice from lemon half into bowl; season with kosher salt. Hang on to lemon.
  • Spread a generous layer of seasoned mayonnaise over toast; shingle a few tomato slices on top. Sprinkle with chives, sesame seeds, sea salt, black pepper, and Aleppo-style pepper. Finely grate some lemon zest from reserved lemon over and drizzle with some oil.

4 plum tomatoes
3 teaspoons olive oil, divided
1 teaspoon each dried basil, oregano and rosemary, crushed
1/4 teaspoon coarsely ground pepper
1/2 teaspoon salt, divided
1 whole garlic bulb
3/4 cup reduced-fat mayonnaise

Steps:

  • Cut tomatoes in half lengthwise; drizzle cut sides with 1-1/2 teaspoons oil. Combine the herbs, pepper and 1/4 teaspoon salt; sprinkle over tomatoes. Place cut side down on a baking sheet coated with cooking spray., Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulb. Brush with 1/2 teaspoon oil. Wrap in heavy-duty foil; place on baking sheet with tomatoes. Bake at 425° for 15 minutes., Turn tomatoes; drizzle with remaining oil. Bake 20-25 minutes longer or until garlic is tender and tomatoes are softened. Cool for 10 minutes., Squeeze softened garlic into a small bowl; chop tomatoes and add to garlic. Stir in mayonnaise and remaining salt until blended.
