HERB AND LEMON CHICKEN IN A CLAY POT

Herb and Lemon Chicken in a Clay Pot image

This recipe utilizes a clay cooker, such as a Romertopf. (for alternative cooking method without a clay pot, see diner524's review) The chicken stays juicy but still gets a crispy skin on top. Remember the clay pot and lid need to be soaked in cold water for 15 minutes before using. Try to find an Herbes de Provence that includes lavender flowers. This is good with steamed rice, or roasted vegies. The juices from the clay pot are good over the rice or vegies.

Time 2h45m

Yield 4 to 6 servings

Number Of Ingredients 13

1 (3-pound) frying chicken, giblets removed and reserved
1 tablespoon olive oil
12 small onions, peeled
3 garlic cloves, peeled
6 sprigs parsley, plus extra for garnish
1/4 pound prosciutto, small dice
2 whole bay leaves
3 large tomatoes, peeled, seeded and chopped
1/2 cup dry white wine
1/3 cup tawny or ruby Port
2 tablespoons brandy
1 tablespoon Dijon mustard
Freshly ground pepper

Steps:

  • Preheat an oven to 350 degrees F. Rub the chicken all over with the oil, and loosely stuff the cavity with 3 onions, 1 garlic clove and 1 sprig of parsley. Set aside. On the bottom of a 3-quart terra-cotta jug or deep heavy casserole, spread half the prosciutto, 2 sprigs parsley, 4 onions, 1 garlic clove, 1 bay leaf and all of the giblets. Place the chicken head-first in the pot, or breast-side up in a casserole. Scatter the remaining onions, garlic, 3 sprigs parsley, prosciutto and bay leaf around and on top of the chicken. • Set the skillet of liquid over high heat, bring to a boil, reduce to a simmer and cook for 10 minutes, or until liquid is reduced by half, stirring often. Preheat a broiler. Place the chicken under the broiler for 3 to 4 minutes, or until browned. To serve, cut the chicken into pieces and arrange on a large platter. Scatter the onions and giblets around the chicken, and spoon some of the warm sauce over the top. Garnish with parsley sprigs and pass extra sauce.

CLAY POT PORK

Clay Pot Pork image

Provided by John Willoughby

Categories     dinner, weekday, main course

Time 1h15m

Yield 4 servings

Number Of Ingredients 11

1/3 cup sugar
3/4 cup chicken stock, more if necessary
3 tablespoons fish sauce
3 shallots, thinly sliced
2 cloves garlic, thinly sliced
2 teaspoons minced ginger
1 teaspoon black pepper
1 small fresh chili, minced optional
3 scallions, trimmed and thinly sliced on the bias, green and white parts separated
1 1/2 pound boneless pork shoulder or pork belly cut into 1-inch cubes
Steamed white rice for serving

Steps:

  • Put the sugar in a medium-size heavy-bottomed pot and cook over medium heat, shaking gently every once in a while, until it starts to melt. Start stirring with a fork and continue, crushing clumps of sugar so that the sugar melts evenly. When the sugar is liquid, continue to cook for another minute or so until it darkens, then remove from heat.
  • Combine the chicken stock and fish sauce and carefully add at arm's length to the sugar (it will splutter and pop). Turn heat to medium high, return sugar mixture to the heat, and cook, stirring constantly, until well combined. (If the sugar clumps when you add the liquid, don't worry, it will melt again.)
  • Add the shallots, garlic, ginger, pepper, chili if using, and the white portion of the scallions. Cook, stirring frequently, until the shallots are nicely softened, 2 to 3 minutes.
  • Add pork to the pot and bring the liquid to a boil. Reduce the heat to low, partly cover and simmer gently, stirring occasionally and adding a splash of stock or water if the pan looks too dry, until the pork is very tender and the liquid has reduced to a medium-thick sauce, about 1 hour.
  • Remove from heat, add the green part of the scallions, and serve over steamed white rice.

CHINESE CLAY POT RICE WITH CHICKEN

Chinese Clay Pot Rice with Chicken image

This is a main dish traditionally prepared in a clay pot, with bits of charred rice at the bottom - a real treat! Don't worry about the clean-up; if you're using a stainless steel pan, soak it afterward with a baking soda solution.

Provided by Li Yung

Categories     World Cuisine Recipes     Asian     Chinese

Time 55m

Yield 6

Number Of Ingredients 9

1 tablespoon vegetable oil
2 thick slices back bacon or Canadian bacon, cut into bite-size pieces
5 cloves garlic, peeled and smashed
3 large chicken legs -- boned, skinned, and cut into large chunks
½ cup dark soy sauce, or to taste
2 tablespoons oyster sauce
1 ½ tablespoons light-colored soy sauce
2 cups uncooked white rice
½ cup water

Steps:

  • Heat the vegetable oil in a large saucepan with a lid over medium heat. Cook and stir the bacon pieces until lightly browned and the oil has a bacon flavor, about 1 minute. Remove the bacon from the pan, turn the heat to high, stir in the garlic, and cook until the garlic cloves are beginning to turn golden brown, about 1 more minute. Add the chicken pieces, stirring to seal the surfaces of the meat. Turn the heat down, and cook until golden brown on the outside but still pink on the inside, about 3 minutes.
  • Return the bacon pieces to the pan, and stir in the dark soy sauce, oyster sauce, light soy sauce, and rice, and mix everything together until well-combined. Pour in the water (should not reach to the top of the rice mixture), cover the pan, and turn the heat to low. Simmer until the rice is cooked and grains of roasted rice are stuck on the bottom of the pan, about 30 minutes. Serve each portion topped with some of the browned rice kernels scraped from the bottom.

CHINESE CLAY POT CHICKEN RICE

Chinese Clay Pot Chicken Rice image

This is an inexpensive traditional recipe my mom gave me, which I have slightly modified. It requires no expensive rice cooker nor a clay pot that hardly gets used; a fry pan and saucepan will do the job. It's simple to prepare and delicious to eat. Enjoy!!!

Categories     World Cuisine Recipes     Asian     Chinese

Time 1h

Yield 4

Number Of Ingredients 15

1 whole chicken breast, cut into big chunks
6 chicken wings, cut into thirds, tips discarded
1 cup dark soy sauce
1 tablespoon sesame oil
8 cloves garlic, smashed
ground white pepper to taste
2 links lop chong (Chinese-style sausage)
6 dried shiitake mushrooms
2 tablespoons vegetable oil
½ cup dark soy sauce
1 ⅔ cups jasmine rice
5 tablespoons chile paste
2 tablespoons grated fresh ginger root
2 tablespoons fresh lime juice
1 cup shredded iceberg lettuce

Steps:

  • Combine the chicken breast, the chicken wings, 1 cup dark soy sauce, the sesame oil, and the garlic in a mixing bowl; season with white pepper. Slice the Chinese sausages on an angle and add to the chicken mixture. Mix well, cover, and chill at least 10 minutes.
  • Thoroughly rinse the shiitake mushrooms and place in a bowl; pour hot water over the mushrooms; allow the mushrooms to sit submerged until they are soaked and bloated, about 15 minutes. Remove the mushrooms, reserving the liquid. Cut the stalks from the mushrooms and discard. Slice the mushrooms in half and set aside.

  • Wash the rice with water until the water comes out nearly clear; drain completely. Combine the rice and 1 1/2 cup of the reserved liquid from the mushrooms in a non-stick pan; bring to a boil. Reduce heat to low; cover and allow to simmer covered for 10 minutes with the heat on. Add the chicken mixture and mushrooms and remove from the heat; allow to sit covered until the rice is completely tender, 15 to 20 minutes.
  • Stir together the chile paste, ginger, and lime juice in a small bowl; drizzle over the chicken rice and top with shredded lettuce to serve.

CLAY POT SESAME CHICKEN

Clay Pot Sesame Chicken image

From Dana Jacobi's book, The Best of Clay Pot Cooking. She says, "Cooking in a clay pot gives you a particularly succulent version of this popular dish. Serve it hot, right from the pot, accompanied by steamed broccoli and rice. Or let the chicken cool, shred the meat, and serve it as a salad tossed in its velvety, nutty sauce." My husband and I really enjoy this recipe. Prep time doesn't include clay pot soaking time, typically 15 minutes in lukewarm water; new pots require about 30 minutes; drain thoroughly. Soaking time is not an issue for me as I do my prep work while the pot is soaking.

BULGARIAN GUVECH- VEGETABLE CASSEROLE WITH MEAT IN A CLAY POT -

Bulgarian Guvech- Vegetable Casserole With Meat in a Clay Pot - image

This dish has a Turkish name and I guess it's origin is Turkey. However the recipe I am sharing today comes from the Southern part of Bulgaria. It is very healthy meal, full with vitamins and protein. It is usually made with pork or beef, tomatoes, okra, mushrooms, peas, green beans, potatoes, eggplant, onions, herbs, and spices and is often served with "Balkan Mixed Salad", a combination of roasted eggplant, sweet roasted peppers, garlic, tomatoes. The veggies in this dish can vary depending on the season. Here is my version of it. You will need a large clay bowl with lid.

Tips for Cooking in Clay Pots:

  • Soak the clay pot before use: This helps to prevent it from cracking and ensures even cooking.
  • Use low to medium heat: Clay pots are good at retaining heat, so you don't need to use high heat. Cooking at a lower temperature will help to prevent food from sticking or burning.
  • Add liquid to the pot: Clay pots can dry out quickly, so it's important to add liquid to the pot, such as water, broth, or sauce.
  • Don't stir the food too often: Stirring the food too often can break it up and make it mushy. Stir the food just enough to ensure that it's cooking evenly.
  • Let the pot cool before cleaning: Clay pots are fragile when they're hot, so it's important to let them cool down before cleaning them. This will help to prevent them from cracking.

Conclusion:

Clay pots are a versatile and affordable way to cook delicious and healthy meals. With a little care and attention, you can use a clay pot to create a wide variety of dishes, from soups and stews to casseroles and roasts. So next time you're looking for a new way to cook, give clay pots a try.
