COCONUT-AVOCADO ICE CREAM

Coconut-Avocado Ice Cream image

My mum loves avocados and coconut milk. Since we have an avocado tree and coconut cream on hand, I tried making this fusion ice cream and it's heavenly. The avocado lends a lovely, appetizing color, and it has the nice aroma of coconut. Simply irresistible. Definitely something different to impress your guests.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 5

2 lbs avocados, pulp
2 tablespoons lime juice
1 1/2 cups coconut milk
3/4 cup sugar (more to taste)
1/4 cup coconut, dried, shredded and lightly toasted (for garnish, more coconut or toasted almonds, pine nuts or pistachios)

Steps:

  • Cut the avocados in half, remove the pit and scoop the pulp out. Cut the pulp into chunks and place it in the blender or food processor. Add the coconut milk, sugar, and lime juice, and puree until smooth.
  • Process the avocado-coconut puree in you ice cream maker, or ice cream ball, according to the manufacturers instructions. Freeze using your ice cream maker. If you don't have an ice cream maker you can serve it as a cold mousse, or you can also freeze it and serve it as ice cream, but it will be a little less fluffy. But its still good!
  • Lightly toast the shredded coconut on a small saute pan set over medium-low heat, stirring constantly so it does not burn. It will take less than a minute. Once the coconut becomes fragrant and acquires a tan, remove and set aside. Sprinkle over the ice cream.

Number Of Ingredients 5

12 ounces avocado meat, approximately 3 small to medium
1 tablespoon freshly squeezed lemon juice
1 1/2 cups whole milk
1/2 cup sugar
1 cup heavy cream

Steps:

  • Peel and pit the avocados. Add the avocados, lemon juice, milk, and sugar to a blender and puree. Transfer the mixture to a medium mixing bowl, add the heavy cream and whisk to combine. Place the mixture into the refrigerator and chill until it reaches 40 degrees F or below, approximately 4 to 6 hours.
  • Process the mixture in an ice cream maker according to manufacturer's directions. However, this mixture sets up very fast, so count on it taking only 5 to 10 minutes to process. For soft ice cream, serve immediately. If desired, place in freezer for 3 to 4 hours for firmer texture.

Tips:

  • Utilize ripe avocados: For the creamiest texture and best flavor, choose ripe avocados that yield to gentle pressure. Overripe avocados may result in a mushy texture.
  • Chill coconut milk: Chilling the coconut milk beforehand enhances its creaminess and thickness, contributing to a richer ice cream.
  • Sweeten to taste: Adjust the amount of maple syrup or honey based on your preferred sweetness level. Taste the mixture before freezing to ensure it's to your liking.
  • Use a high-powered blender: To achieve a smooth and creamy texture, use a high-powered blender that can effectively blend the frozen ingredients.
  • Freeze in an airtight container: Transfer the blended mixture into an airtight container to prevent freezer burn and maintain the ice cream's quality.

Conclusion:

Indulge in the tropical delight of coconut avocado ice cream, a vibrant and refreshing treat that combines the creaminess of avocado with the subtle sweetness of coconut. Experiment with different flavor variations, such as adding a touch of lime zest or a hint of vanilla extract, to create a unique and personalized dessert. Enjoy this luscious ice cream as a guilt-free indulgence or share it with loved ones as a delightful summertime treat.
