3 ½ ounces cod, cut into bite-size pieces
1 large tomato, diced

Steps:

2 cups water
1 cup uncooked brown rice
1 tablespoon vegetable oil
1 large onion, chopped
3 cloves garlic, crushed
1 pound cod fillets, cut into chunks
1 ½ tablespoons curry powder
2 teaspoons chili powder
1 teaspoon ground turmeric
1 teaspoon ground cumin
salt and pepper to taste
1 (14 ounce) can coconut milk
1 (16 ounce) package frozen stir-fry vegetables
1 tablespoon cornstarch

Steps:

  • Bring the water and rice to a boil in a pot. Cover, reduce heat to low, and simmer 45 minutes.

Steps:

1 large onion, chopped
3 garlic cloves, minced
2 teaspoons curry powder

10 whole allspice

  • In a wok or dutch oven, heat oil over medium heat, cook onion and garlic for 5 minutes or until soft.

1 bell pepper
1 onion
1 1/2 cups coconut milk
3 tomatoes

salt and pepper

Steps:

  • Cut the fish in serving pieces.
  • Chop the onion, bell pepper, garlic, and tomatoes in small pieces.
  • Heat the oil over medium-high heat in a large pot.
  • Sear the fish filets and put them on a separate plate. Do not cook through.
  • Reduce the heat to minimum and add the pepper and onion. Saute until the onion is semi-transparent.

1 onion, chopped

6 green cardamom pods, lightly crushed
4 cloves
1 large piece cinnamon stick

10 1/2 ounces coconut milk
2 to 4 green chiles, left whole
Kosher salt
3 1/2 ounces water
10 curry leaves*

1 pound 2 ounces salmon or firm white fish fillets, cut into large pieces

  • Heat the oil in a nonstick pan, add the mustard seeds, cardamom pods, cloves, and cinnamon stick and stir-fry for 20 seconds (be careful, the mustard seeds might pop). 1 teaspoon turmeric

1/2 lemon
300 g coconut milk (canned)

2 tomatoes (crushed)
4 peppercorns
4 cloves

Steps:

  • Add half the turmeric,salt and lemon juice to little more than half a cup of water(in a dish)mix.
  • Marinate the fish in it for 20 minutes then rinse it off under the tap.
  • In a bowl mix together the tomatoes,peppercorns,cloves,cardamoms,curry leaves,coconut milk,turmeric and salt to taste.

1 teaspoon garam masala
1/4 teaspoon chili powder (cayenne)

1 cup coconut milk

1-2 fresh chili peppers, cut in half lengthwise

  • 1. Wash the fish and pat very dry. Cut the fish into 2-inch pieces. 2. Heat a medium saucepan over medium heat and swirl in the oil. When the oil is heated, add the onion, ginger and garlic. Turn the heat to medium-low and let the aromatics cook slowly. Saute until very fragrant, about 5 minutes. Take care not to let it burn! 3.
