GRAIN-FREE PALEO WAFFLES WITH COCONUT FLOUR

Grain-Free Paleo Waffles with Coconut Flour image

If you are looking to turn traditional waffles into a grain-free paleo treat, this recipe made with coconut flour is for you! I created this one on a hot Sunday morning in Laguna Beach, when I was setting up a quick homemade brunch that was healthier than the waffles you get when you eat out in a restaurant. I feel making your own food is always the best option to maintain your healthy eating habit, so most of the time, I prefer to eat at home and only grab a drink when I am out. These paleo waffles are a winner: they are free from grains, dairy, and eggs and they have a delicious flavor.

COCONUT FLOUR WAFFLES

Yield 2

Number Of Ingredients 12

Belgian Waffles with Coconut Flour
Yields: 2 saving
Ingredients:
3 eggs, lightly mixed
Sweetener to taste (I used 1/4 cup sugar)
1 tbsp. Organic Coconut Oil, (melt if it's too tough to scoop)
1/2 cup Coconut Flour
1/4 tsp. Baking powder
1/4 tsp. Baking soda
Pinch of Salt
1/2 cups Coconut milk *splash more if needed
*Oil for brushing the waffle iron/maker

Steps:

  • Directions: Mix eggs, then add sweetener (read notes), and coconut oil, mix well then add coconut flour, following baking powder, baking soda, pinch of salt, stir and add milk last. You might want to add more if it's too thick. Combine everything well, until the texture is smooth. The batter will be thicker than traditional waffles, but not far off. Preheat the waffle maker brush oil on the waffle iron and scoop the batter in and pour over the waffle iron. Close the lid and wait until it is ready to open. Once waffle is done, be careful when you remove it. The texture of the waffles with coconut flour is different so they rip easily. Carefully start from one corner and remove at ones. NOTE** Use a sweetener that supports your diet. I used sugar, but let's say you'd like to use liquid stevia, so I'd suggest for you to use like 1 teaspoon or to taste. As for coconut oil, you can melt the coconut oil in the pot of warm water, placing a jar in and waiting for a few minutes until it's easy for you to scoop. I said it in the directions, but I feel the need to say it again: These waffles are NOT your typical traditional waffles, they are very soft, and they rip easier than when made with all purpose flour. You can also use low fat 'regular' milk, even soy milk would work fine. Any other add-ins: cinnamon, nutmeg, powdered ginger etc. I used coconut sugar and increased the coconut milk to between 3/4 & 1 cup.

GRAIN FREE - PALEO WAFFLES WITH COCONUT FLOUR

Grain Free - Paleo Waffles with Coconut Flour image

Number Of Ingredients 15

30 g Cassava Flour
15 g Arrowroot Flour
15 g Coconut Flour
20 g Tigernut Protein Mix
100 g Banana (1 small banana)
120 g Coconut Milk
20 g Water
50 g Orange Juice (juice of 1/2 orange)
25 g Maple Syrup
3 g (1 1/2 tsp Baking Soda)
20 g Apple Cider Vinegar
1/2 piece Papaya
2 pieces dried Figs
2 tablespoons shredded Coconut Flakes
10 g shaved 100% Dark Chocolate

Steps:

  • Turn on your Waffle machine.
  • Combine all dry ingredients in a bowl and mix well.
  • Combine banana, coconut milk, orange juice and water in a blender and process until you get a smooth liquid.
  • Pour the liquid over the flour mix, add in the maple syrup and mix well.
  • Lastly, add in the baking soda and the apple cider vinegar and mix well.
  • Pour half the batter in the waffle machine and when you first grain free waffle is ready, cook the second one with the remaining batter.
  • Top each waffle with some diced papaya, dried figs, shredded coconut and shaved dark chocolate and enjoy!!

Tips:

  • Use a good quality coconut flour. Not all coconut flours are created equal. Some are more finely ground than others, which can affect the texture of your waffles.
  • Be sure to measure your ingredients correctly. Coconut flour is very absorbent, so it's important to measure it accurately. Otherwise, your waffles could turn out dry or crumbly.
  • Let the batter rest for a few minutes before cooking. This will give the coconut flour time to absorb the liquid and create a smooth, consistent batter.
  • Cook the waffles over medium heat. If you cook them over too high heat, they will brown too quickly and the inside will be undercooked.
  • Serve the waffles immediately with your favorite toppings. Coconut flour waffles are best when served fresh and hot.

Conclusion:

Coconut flour waffles are a delicious and healthy alternative to traditional waffles. They are gluten-free, grain-free, and low in carbs. They are also a good source of fiber and healthy fats. If you are looking for a new and exciting way to enjoy waffles, give coconut flour waffles a try. You won't be disappointed!
