12 Medjool dates, pitted
1 (11 ounce) bottle So Delicious® Dairy Free Culinary Coconut Milk
½ cup fresh raspberries
½ cup sliced fresh strawberries

Steps:

  • Chop almonds in a food processor and add medjool dates. Blend until smooth.
  • Reserve about 1/8 cup of date mixture and set aside.
  • Prepare two individual-sized tart pans with oil or line with parchment. Divide the date mixture among the two pans and press along the bottom and sides.

1/4 cup sugar
1/4 teaspoon salt
1/2 cup cold butter, cubed
1 egg, lightly beaten
FILLING:
4 ounces cream cheese, softened
1/4 cup sweetened condensed milk
2 tablespoons lemon juice
2 medium kiwifruit, peel and sliced
2/3 cup sliced fresh strawberries
2/3 cup each fresh raspberries, blueberries and blackberries
1/4 cup sweetened shredded coconut, toasted

  • In a large bowl, combine the flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Add egg; mix with a fork until blended. Shape dough into a ball.
