2 tablespoons flour
1 tablespoon Creole seasoning
4 (4 ounce) fillets tilapia
½ cup cornstarch
1 (4 ounce) carton egg substitute
½ cup canola oil
½ cup apricot jam
2 teaspoons brown mustard
1 teaspoon prepared horseradish

Steps:

  • Toss together the coconut, flour and Creole seasoning in a bowl. In a separate bowl, toss the tilapia with the cornstarch, and shake off the excess. Pour the egg substitute into a separate bowl, and dip the fillets in the egg. Press fillets in the coconut mixture coating all sides.

2 tilapia fillets
1 egg
1/4 cup water
1/3 cup cornstarch
1 1/2 cups coconut flakes
1/4 teaspoon curry powder
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 tablespoon peanut butter
2 tablespoons curry sauce (can be bought in stores or can be made by combining coconut milk and green curry powder)
1 teaspoon minced garlic
1/4 teaspoon lime juice
1/4 teaspoon red chili pepper flakes
1/4 teaspoon soy sauce
1 pinch ginger
1 pinch sage
1/4 teaspoon brown sugar (optional)

Steps:

  • In a wide bowl/container, mix coconut flakes, curry powder, garlic powder, paprika (set aside).
  • In a small bowl, mix 1 egg, 1/4 cup water and 1/3 cup of corn starch.
  • Dip the Tilapia fillets in the egg mixture. Use a plastic bag to cover your hands when handling fillets, if preferred. Coat the fillets thoroughly with the coconut flake mixture, especially along the top, as this dramatically improves the appearance of the dish while baking.

1(1-inch) piece fresh ginger, peeled and grated
1 lemon, zested and juiced
1/2 pound snow peas
4 small red potatoes, quartered sliced into 1/4-inch pieces
1 cup coconut milk

  • Special equipment: brown paper bags
  • Preheat oven to 350 degrees F.
  • Soak 4 small brown paper bags in vegetable oil until saturated. Scrape off excess oil and set aside. Season the fillets with salt, grated ginger, lemon zest and juice. Top each with about 5 or 6 snow peas and 1 of the thinly sliced potatoes. Transfer each fillet into 1 of the bags and pour about 1/4 cup of the coconut milk into each bag. 1/3 cup shredded coconut
1/3 cup diced dried tropical fruit, bits
1/4 teaspoon onion powder
1/8 teaspoon garlic powder

Miami Mango Salsa
This is a sweet salsa, but if you want heat add red pepper flakes or chillis.
1 ripe mango
1/2 red bell pepper
1 shallot
4 T fresh chopped cilantro
juice and zest of 1 lime
sea salt

Steps:

  • 1. Season fish with a light dusting of spices and a generous sprinkle of sea salt. 2. Prepare a breading station for fish by lining up 3 bowls. In the first, put the flour. In the second, whisk together the egg and milk. In the third, mix the coconut and panko crumbs. Dip each fillet into the three bowls in this order: flour, egg bath, coconut. Coat well. 3. Heat oil in frying pan over a medium high flame. When hot add the fish. Turn fish when the flakes start to brown, about 2 minutes. Repeat on the second side. Carefully poke a knife to make sure the center is cooked. 4. Sprinkle with sea salt and serve immediately with lime wedges and Miami Mango Salsa. Salsa: 1. Cut mango, pepper and shallot into a fine dice. 2. Combine all ingredients and season with sea salt to your taste. Allow flavors to meld together for at least 30 minutes. flour
1 lime, juice of
3/4 cup Egg Beaters egg substitute (liquid eggs)
1 cup plain breadcrumbs
1/2 cup coconut
1/4 teaspoon salt
1/4 teaspoon dried sweet basil leaves
1/4 teaspoon garlic salt
1/2 teaspoon pepper
cooking spray

Steps:

  • Place flour in flat bowl. (for coating filets).
  • Stir lime juice and liquid egg together and put in its own bowl.
  • Mix breadcrumbs and coconut together. Add salt, pepper, Basil, garlic salt and place in a flat bowl.

1 cup flour
1 cup plain unflavored breadcrumbs
1 cup shredded coconut
1/4 cup vegetable oil
1 pink grapefruit (it's sweeter than the white)
1 orange
1 lime
1 teaspoon sugar

Steps:

  • Peel and quarter each piece of fruit. You may want to shred the fruit finer if you don't want large chunks. Sprinkle a teaspoon of sugar over the mixture to sweeten slightly. Place in fridge until you're ready to serve. Rinse the tilapia with cold water and pat dry. On a large plate, mix together the shredded coconut and breadcrumbs. You'll need three separate plates for the breading: one for flour, one for eggs and one for the coconut and breadcrumb mixture. Dredge the fish in the flour; dip into the beaten eggs and then coat thoroughly in the coconut and breadcrumb mixture. 6-8 Tilapia fillets
Enough olive oil to coat
Seasoned bread crumbs (fresh if you have easy access.)
2 red peppers
2 cans low-fat coconut milk
1 TBP mild curry paste
1 TBP dark brown sugar
1 large bunch fresh cilantro

Steps:

  • Finely chop the red peppers and put aside. If you wish, cut one or two of the fillets into fish nuggets or sticks for the kids. Dip the tilapia fillets in olive oil then coat on both sides with bread crumbs. Coat a non-stick pan (a double griddle works best) with oil (either olive or canola) and pan fry the fillets until they are a golden brown. Turn the fillets so that they can cook to a nice golden brown on both sides and place the red pepper in the spaces between the fillets. Stir the peppers so that they cook evenly. While the fish and peppers are cooking, in a medium sauce pan, over medium heat, wisk together the coconut milk, curry paste and brown sugar. When the fish is golden brown on both sides and the red pepper is cooked, add the sauce over the tilapia fillets and red peppers. The sauce will bubble.
