1 pint cherry tomatoes, halved

  • Preheat oven to 375°. Place cod and asparagus in a 15x10x1-in. baking pan brushed with oil. Add tomatoes, cut sides down. Brush fish with lemon juice; sprinkle with lemon zest. Sprinkle fish and vegetables with Romano cheese. Bake until fish just begins to flake easily with a fork, about 12 minutes., Remove pan from oven; preheat broiler. Four 5-ounce pieces cod
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 pound asparagus, trimmed and cut into 2-inch pieces
1 shallot, sliced into rings
2 cloves garlic, peeled and sliced
One 13.75-can artichoke hearts, quartered
1/3 cup kalamata olives, halved
1 tablespoon capers
1/4 cup dry white wine
3 tablespoons lemon juice
Lemon wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Season the cod on all sides with salt and pepper and set aside. Heat a 10-inch cast-iron pan over medium-high heat. Add 2 tablespoons olive oil and swirl to coat the pan. Add the shallot and garlic and cook, stirring, until softened and lightly browned. Add in the asparagus, artichoke hearts, olives and capers. Cook, stirring frequently, until the garlic is fragrant, about 1 minute. Add in the wine and let it reduce slightly, about 1 minute. Add in the lemon juice.
  • Gently nestle the cod into the vegetables. Transfer the skillet to the oven and cook until the cod easily flakes apart, 15 to 20 minutes.

1 to 1 1/2 pounds filet of cod, 3 equal size pieces
6 tablespoons butter, salted & divided
1 1/2 teaspoons sea salt
3 Campari tomatoes, cut into 2 thick slices
1 cup arugula, packed, divided
1/4 cup chardonnay
1/4 cup fig balsamic glaze
12 asparagus stalks, cooked, steamed or pan seared
Coarse ground pepper, to taste

Steps:

  • Preheat oven to 375°F. Melt three tablespoons of the butter in a large (about 10") heavy skillet over medium high heat. Salt both sides of the cod. Put the cod (top side down first) Fry for about 90 seconds on each side. Then flip back to the top side. Move the cod to one side of the skillet. You'll be making three serving 'stacks' in the skillet. Place two campari tomatoes in the skillet and on top of each, put equal amounts of arugula. Top with a piece of cod and one tablespoon of butter each. Cook in a preheated 375°F oven about 5 minutes. Remove and carefully place cod stacks on serving plates. Add the asparagus. In the empty skillet, turn heat to to medium high, add the remaining butter, melt then add the wine and deglaze the skillet. Pour over the cod stacks. Drizzle each with the fig balsamic glaze. Notes: I served asparagus with this dish. You can cook the asparagus in a cast iron skillet with olive oil, some lemon pepper, pepper and sea salt for about 5 minutes.   • Cook asparagus in large pot of boiling salted water until crisp-tender, about 3 minutes. Drain. Transfer to bowl of ice water to cool. Drain well.

Fold 2 opposite sides of parchment in over fish and vegetables, then fold in remaining 2 sides, enclosing completely. Fasten parchment edges together with paper clips to seal packet. Place on large rimmed baking sheet. Repeat procedure with remaining parchment, oil, fish, garlic-lemon mixture, asparagus, and prosciutto. (Can be prepared 6 hours ahead. Refrigerate.)

1 1/2 lbs cod fish fillets
1 onion, halved and sliced fine
2 garlic cloves, minced
1 pinch chili powder
1 cup white wine
1 pinch salt
1 pinch pepper
1 tablespoon olive oil
1 tablespoon fresh parsley, minced

Steps:

  • Set your oven to 400 degrees F.
  • Clean the cauliflower and parboil the entire head in lightly salted boiling water for 10 minutes. Drain and then separate into fleurettes. Set aside in a warm place (ie bowl with a lid).
  • While the cauliflower is cooking, grease an ovenproof casserole dish with olive oil. Arrange the fish in the dish, then sprinkle it with the onion and garlic. Season with salt and pepper and the chile powder if using. Pour the wine over the fish and drizzle with the olive oil.

2 ounces butter
2 ounces flour
1/2 liter milk
5 ounces grated cheese
4 cups mashed potatoes
4 tablespoons softened butter

Steps:

  • Place cod fillets in the bottom of a 8x8x2 buttered oven dish.Place dish on a cookie sheet pan because there will be sauce that escapes and runs down the outside of the casserole dish.
  • Make a cheese sauce by mixing 2 oz each of butter and flour, 1/2 liter of milk and 3 1/2 oz grated cheese cook till slightly thickened: pour over fish.
  • Top with mashed potatoes sprinkle grated cheese over them and dot with butter.
