COFFEE MUG CAKE
I was wanting a small serving of cake, but didn't want to make the whole box. This is what I came up with. It came out light and fluffy and hit the spot. I think it could be used with any boxed cake, but I used a Betty Crocker brand. Also, if you decide to use the real egg try beating the whole egg in a separate bowl and then pouring off about half.

COFFEE MUG CHOCOLATE CAKE
This is great for those times when I have a chocolate craving that just won't go away. It's quick, easy and makes a very small portion. I've tried it with semi-sweet chocolate chips, can't wait to try it with peanut butter chips and white chocolate chips. Great for an afternoon snack for the kids and it's simple enough that they can make it themselves.

Tips:
- Use a quality coffee: The flavor of your coffee cake will depend on the quality of the coffee you use. Choose a dark roast coffee with a strong flavor.
- Measure your ingredients accurately: This is especially important for the baking powder and baking soda. Too much or too little of either ingredient can ruin the cake.
- Mix the batter until it is just combined: Overmixing the batter will make the cake tough.
- Do not overcook the cake: The cake is done when a toothpick inserted into the center comes out clean.
- Let the cake cool before serving: This will allow the flavors to develop and the cake to set.
Conclusion:
