1/2 cup sugar
1-1/2 teaspoons cornstarch
1/4 teaspoon ground cinnamon
1 cup chopped dates
1/2 cup raisins
1/2 cup water
DOUGH:
1 cup butter, softened
2 cups sugar
3 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1/2 teaspoon salt

Steps:

  • In a small saucepan, combine the first six ingredients. Cook and stir over medium heat until thickened and bubbly. Cool. , In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and salt; gradually add to the creamed mixture and mix well. Cover and refrigerate for 2-3 hours or until easy to handle. , On a lightly floured surface, roll half of the dough to 1/8-in. thickness. Cut with a 2-in. round cookie cutter. 1 cup water
2 cups raisins
1 cup shortening
1-3/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped walnuts

Steps:

  • Combine water and raisins in a small saucepan; bring to a boil. Cook for 3 minutes; remove from the heat and let cool (do not drain). , Preheat oven to 350°. 2 teaspoons instant coffee crystals
2 tablespoons coffee-flavored liqueur
1 cup butter or 1 cup margarine, softened
3/4 cup packed brown sugar
1 cup sugar
2 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a small bowl, dissolve instant coffee crystals into the coffee liqueur; set aside.
  • In a large bowl, cream together the butter, brown sugar, and white sugar.

I was using a recipe a friend had given me for chocolate chip cookies, but having a brother who is lactose intolerant, and having family members who have been told by doctors not to eat chocolate, I changed the recipe just enough to make it my own. It was a real crowd pleaser, too.

2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs (To lower cholesterol the 2 eggs could be replaced with 3 egg whites)
1 teaspoon vanilla
1 cup raisins

Steps:

  • In a mixing bowl, mix flour, salt, and baking soda.
  • Put shortening into medium sized bowl.

½ cup coffee flavored liqueur
1 cup shortening
2 cups packed brown sugar
3 eggs
½ cup milk
3 cups all-purpose flour

2 ½ cups rolled oats
1 cup chopped walnuts
1 cup white chocolate chips

Steps:

  • Place raisins in a small bowl, and add coffee flavored liqueur. Heat in the microwave for approximately 2 minutes, or until hot. Set aside to cool (overnight is great). Drain, and reserve liquid.
