Crust:
1 c. fine graham cracker crumbs
1/2 c. finely chopped walnuts
1/4 c. sugar
1/2 c. melted butter
Filling:
1 envelope unflavored gelatin
1/2 c. strong cold coffee
1/2 c. sugar
1 T. flour
1/4 tsp. salt
3/4 c. hot strong coffee
1 c. whipping cream
1/4 tsp. vanilla

Steps:

  • Crust: Mix crust ingredients well and press firmly into a 9" pie plate. Bake about 8 mins in 350 degree F oven. Cool. Filling: Sprinkle gelatin over cold coffee to soften. Mix together sugar, flour and salt. Stir in hot coffee and cook, stirring constantly, until thickened. Add gelatin and stir until dissolved. Chill until mixture is slightly thicker than unbeaten egg whites. Whip cream until stiff and stir in vanilla. Gently fold the gelatin mixture into the whipped cream. Pour into pie shell and chill until firm. Garnish with whipped cream rosettes, instant coffee granules, and whole walnut halves.

1/2 cup packed light brown sugar
1/2 cup butter, room temperature
1 cup sugar
3 eggs
1/4 teaspoon salt
1/4 cup heavy cream
1/2 cup strong coffee
1 cup coarsely chopped walnuts
1 teaspoon vanilla
9 inches unbaked pastry shells
1/4 cup broken walnuts

Steps:

  • Cream brown sugar and butter until well blended; add sugar and mix well.
  • Add eggs, one at a time, beating well after each.
  • Add salt, cream and coffee and mix well.
  • Cook over boiling water, stirring for 5 minutes.
  • Remove from water and stir in 1 cup walnuts and vanilla; pour into pastry shell.
  • Bake at 350ºF for 1 hour.
  • Scatter broken walnuts on top and bake 5 minutes more.
  • Cool.
