Time 25m

Yield 12 serving(s)

Number Of Ingredients 8

750 ml dry red wine
2 cups cranberry juice cocktail
1 cup sugar
1/2 cup water
1/4 cup lemon juice
4 cinnamon sticks
1/4 cup brandy
lemon slice

Steps:

  • In a large saucepan, mix together red wine, cranberry juice, sugar, water, lemon juice, and cinnamon sticks.
  • Heat just until mixture bubbles around the edges; reduce heat.
  • Simmer, uncovered, for 10 minutes.
  • Remove cinnamon sticks.
  • Stir in brandy.
  • Ladle mixture into cups or mugs; garnish with a lemon slice.

Tips:

  • Choose the Right Apples: Use a variety of apples with different flavor profiles to create a complex and balanced wassail. Some good options include Granny Smith, Honeycrisp, and Braeburn.
  • Simmer, Don't Boil: Bring the wassail to a simmer and then reduce the heat to low. Simmering allows the flavors to meld and develop without scorching the drink.
  • Use Fresh Spices: Whole spices, such as cloves, cinnamon sticks, and nutmeg, provide more flavor than ground spices. Toast the spices before adding them to the wassail to release their essential oils.
  • Add Alcohol Wisely: The amount of alcohol you add to your wassail is a matter of personal preference. Start with a small amount and add more to taste. Remember, wassail is meant to be enjoyed slowly and savored.
  • Serve Warm: Wassail is best served warm, so make sure to reheat it if it cools down. You can also garnish it with a cinnamon stick or a slice of orange for an extra festive touch.

Conclusion:

Wassail is a delicious and versatile holiday drink that can be enjoyed by people of all ages. With its warm, spiced flavor and festive presentation, wassail is the perfect way to celebrate the holiday season. Whether you're hosting a party or simply want to enjoy a cozy night in, wassail is sure to put you in the holiday spirit. So gather your ingredients, crank up the Christmas carols, and let's make some wassail!
