Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Time 25m

Number Of Ingredients 10

1/4 small sweet onion, such as Vidalia, or red onion, diced (1/4 cup)
1 small clove garlic, peeled
1 teaspoon Dijon mustard
1 tablespoon sherry vinegar
1/3 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1 pound small tomatoes, such as Campari, sliced crosswise
1 yellow bell pepper, seeded and cut into 1-inch pieces
1 mini cucumber, cut into 1/2-inch half-moons
2 slices country-style bread (2 ounces), crusts removed

Steps:

  • Place onion in a small bowl of ice water. Let stand 10 minutes, then drain and pat dry.
  • Using a Microplane, finely grate garlic into a small bowl. Whisk in Dijon and vinegar. Slowly drizzle in oil in a steady stream, whisking until emulsified. Season with salt and pepper.
  • Arrange tomatoes, pepper, cucumber, and onion on a platter. Toast bread, then cut into 1/2-inch cubes and sprinkle over salad. Season with salt and pepper and drizzle with vinaigrette; serve.

Tips:

  • Choose ripe and flavorful tomatoes: The quality of your tomatoes will greatly impact the taste of your salad, so make sure to select ripe, juicy tomatoes that are bursting with flavor.
  • Use a variety of colors: Gazpacho salad is a visually appealing dish, so use a variety of colorful vegetables to make it even more vibrant. Some good options include red bell peppers, orange carrots, yellow squash, and green zucchini.
  • Chop your vegetables evenly: This will ensure that they cook evenly and have a consistent texture.
  • Don't overcook your vegetables: Gazpacho salad is best when the vegetables are still slightly crisp. Overcooking them will make them mushy and bland.
  • Use a good quality olive oil: Olive oil is a key ingredient in gazpacho salad, so make sure to use a good quality oil that has a fruity, flavorful taste.
  • Season your salad to taste: Add salt, pepper, and any other desired seasonings to taste. You can also add a splash of vinegar or lemon juice for a bit of acidity.

Conclusion:

Gazpacho salad is a refreshing, healthy, and delicious dish that is perfect for a summer meal. It is easy to make and can be tailored to your own personal preferences. With its vibrant colors and flavors, gazpacho salad is sure to be a hit at your next party or gathering.
