These are sooooo great (and EZ)! I grew up eating these about once a week and they are incredible with mashed potatoes or buttered egg noodles and a veggie. While this recipe is basically my mom's, I have changed one thing...instead of using chopped onion in the burgers, I use an envelope of onion soup mix...it gives them the PERFECT flavor! This is now one of my family's favorite meals...try it and it will probably become one of your's, too. P.S. These burgers also work for grilling (without the gravy :).

- Combine ground beef, bread, soup mix, salt, pepper, ketchup, garlic powder, parsley and eggs in a large bowl until well mixed.
- Prepare each burger with approx 1/3 cup of meat mixture and form into patties about 1/2 inch thick.
- Heat a 12" skillet over med-high heat and fry burgers for about 5 minutes on each side, until they are almost done.
- Remove burgers to a plate and discard all but about a tablespoon of drippings from skillet.
- Lower heat under skillet and prepare brown gravy with water in a bowl or measuring cup; slowly pour into skillet, stirring constantly, scraping up any brown bits from the bottom.
- When gravy has thickened, place burgers back in the pan and cover.
- Simmer for about 20 minutes, or until burgers are done.
- Serve with mashed potatoes or egg noodles.

- Cut the round steak into pieces about the size for one serving -- maybe 2-3 inches by 4-5 inches.
- Season meat with salt, pepper, garlic.
- Dredge in white flour (both sides).
- Brown meat in 1/2 cup (+/-) oil in skillet or bottom of pressure cooker.
- Empty the soup cans into the pressure cooker. (If you used it for browning, be sure to pour off excess oil.).
- Add the meat -- unless it's still in the pressure cooker :).
- Mix meat gently into soup concentrate, making sure that each piece is coated on both sides.
- Following the directions for your pressure cooker, cover and seal.
- Place the "rocker" on the top steam vent.
- Cook over medium-high heat.
- When the "rocker" begins rocking, you can reduce heat as long as it keeps rocking.
- Cook for ten to twelve minutes, then remove from heat.
- Following directions for your cooker, allow to cool on a trivet or hasten the cooling with water running into a sink.
- DO NOT remove the rocker until the pressure has gone down.
- Open lid when the pressure lock permits.
- Serve hot with mashed potatoes and vegetable of your choice.
- (Increase or decrease amounts carefully! The amount of meat can be varied, but doubling the meat doesn't mean you need to double the amount of oil.).

- 1. PREP/PREPARE
- 2. Gather your ingredients.
- 3. Chef's Tip: The most important ingredient in this recipe is the correct cut of beef. The wrong cut of beef can become dry and stringy, which no sauce will ever be able to rescue. If you use beef chuck roast, you will have a juicy, tender and flavorful roast. Every time.
- 4. Take the smashed garlic, /rosemary and thyme, and tie together in a piece of cheesecloth with a piece of cooking twine.
- 5. Chef's Note: Tying the spices together is called a bouquet garni. By bundling them together it helps to remove them from the stew before consumption.
- 6. Add the oil to a Dutch oven, and bring the heat up to medium-high.
- 7. Season the roast with salt and pepper.
- 8. Add the roast to the Dutch oven and sear, about 4 minutes per side.
- 9. Chef's Note: Searing a roast does NOT lock in the juices (not sure how that rumor got started); however, it will add flavor to the finished product.
- 10. Remove the roast, and reserve.
- 11. Place a rack in the lower position, and preheat the oven to 300f (150c)
- 12. Reduce the heat on the Dutch oven to medium low, and layer the onions, potatoes and carrots, in that order.
- 13. Chef's Tip: Try to cut the carrots and potatoes to the same thickness. That way they will all cook evenly.
- 14. Return the roast to the Dutch oven.
- 15. Add the cumin, paprika, cayenne, flour, and wine to the hot broth, and whisk to combine.
- 16. Add the liquid to the Dutch oven, along with the bouquet garni.
- 17. Add the bacon slices to the top of the roast.
- 18. Allow the liquid to come up to a slight simmer.
- 19. Cover and place in the preheated oven.
- 20. Cook in the oven (without opening) for 2 to 3 hours, or until the roast is fork tender.
- 21. Chef's Tip: If you want your veggies to have a bit more of a bite to them, then do not add them until the last hour of cooking.
- 22. Remove the roast, discard the bacon and allow it to rest for 10 minutes.
- 23. Remove the bouquet garni from the liquid and discard.
- 24. PLATE/PRESENT
- 25. Place some veggies and gravy in a deep plate.
- 26. Add a thick slice of beef to the top, and ladle on a bit more gravy.
- 27. Serve with some nice biscuits, to soak up all that yummy gravy. Enjoy.
- 28. Keep the faith, and keep cooking.
FRIED CHEESECAKE BITES (AKA THE ULTIMATE COMFORT FOOD)
A crispy but tender outside with a slightly warm and gooey citrus cheesecake filling. I serve these with blueberry syrup on the side for dipping. I created this recipe for a dinner party I was having and wanted a unique dessert. These are crowd friendly and totally comfort food! I would encourage you to even make your own cheesecake with my flavorings and then use that as your cheesecake base. I'm a food purist and would have loved to do that, but time was not on my side so I had to settle for a ready made cheesecake filling (which I made flavor enhancements to), and this is that recipe. Either way, you are sure to enjoy these amazing little balls of deliciousness!

- *Note - If you cannot find Cats Cookies from Trader Joes, simply use animal crackers and mix 3/4 teaspoon cinnamon with the crumbs.
- Empty the cheesecake filling into a large mixing bowl. Stir in the lemon zest, Grand Marnier, 1 teaspoon vanilla, 1/2 teaspoon salt, and 2 teaspoons of sugar. Mix until all ingredients are well blended.
- Prepare a cookie sheet lined with foil or parchment paper. With two spoons or with your hands make little balls using the cheesecake mixture. The size should be about the size of a cherry tomato (not grape tomato!).
- Place the balls in rows on the cookie sheet -- as many as you can fit. Don't worry about crowding them, just don't let them stick together. Put the sheet in the freezer for 2 - 3 hours.
- In the meantime, prepare your cookie crumbs. Place cookies (and cinnamon if using) in a large plastic zip top bag. Use a rolling pin or glass to crush cookies and make crumbs. Place crumbs in bowl and set aside.
- Close to the time you will remove the sheet from the freezer, prepare the batter using the flour, baking powder, egg, milk, 1 teaspoon vanilla extract, 1/2 teaspoon salt, and 2 teaspoons sugar. Whisk until mixture is well blended and mostly lump free.
- Heat a large deep pot with oil -- enough to go up the sides by about 3 - 4 inches. The oil should be heated to about 360 degrees. Use an attachable thermometer to ensure that this temperature is reached. If the oil is not hot enough, the balls will fall apart and melt everywhere. If too hot, they will brown very quickly and may burn.
- Make an assembly line of the cookie sheet, followed by the bowl of cookie crumbs, and then the batter.
- Pick up a cheesecake ball and gently roll it in the cookie crumbs, to cover most of the cheesecake, but not all. Then dip the cheesecake ball in the batter (you can use 2 spoons or your hands) and shake off excess gently.
- Drop ball in hot oil and wait for a very light brown color to appear. Roll the ball around to ensure even browning on all sides.
- Remove from oil with a slotted spoon and place cooked cheesecake balls on a plate lined with paper towels.
- Repeat until all are cooked. Then sprinkle lightly with powdered sugar and remove paper towels if you'd like a prettier presentation.
- Serve with a side of blueberry syrup. (RECIPE: One pint blueberries in a saucepan with 1/3 cup sugar, 2 tablespoons lemon juice, 1 teaspoon vanilla. Cook over medium heat for a few minutes until dark and shiny, constantly keeping berries moving by gently stirring or shaking the pan. Strain out the fruit and pour remaining syrup in a container).
HAMBURGER "COMFORT FOOD" CASSEROLE
Since I love casseroles I tried to modify my usual hamburger/potatoe casserole and I think I made it a little better this time with the additon of the rotel tomatoes and an addition of the vegetable soup. Since this juices up well you may need a thickener at the end. I added extra cheese and let it sit for about 15 minutes last time and that worked well. Hope you enjoy.

- For the stock: In a large pot over high heat, place the chicken parts, chile pepper, carrots, celery, onions, bay leaf, garlic and chicken broth. Mix well and bring to a boil. Reduce heat to low, cover and simmer for 1 to 2 hours, or until chicken comes off bone easily. Cover and refrigerate overnight.
- The next day, skim the fat off the top of the soup and remove the chicken parts. De-bone the chicken and chop the meat into bite size pieces. Discard bones and set meat aside. Using a slotted spoon, remove and discard the vegetables. Return the pot to the stove over high heat and bring to a boil. Reduce heat to low for 10 to 15 minutes, add the heavy cream and stir well.
- In a separate small bowl, dissolve the cornstarch in the water and add to the pot. Stir until thickened, and make the dumplings while the stock reduces.
- For the dumplings: In a large bowl, combine the flour and the heavy cream, mixing well. Roll into balls about 1 1/2 inches in diameter. Drop balls carefully into the simmering soup and cook for 7 minutes. Then cover soup and cook for 7 more minutes. Add the chicken, stir well and allow to heat through.

- 1. Put bones in a large stock pot and boil in water. (This will make a nice bone broth for your Fido). Boil for 45 minutes -1 hour. Remove the bones, set the broth aside.
- 2. Peel the Sweet Potato, then cut into bite size pieces.
- 3. Chunk the Chicken Breasts into bite size pieces and toss into a large crock pot.
- 4. Drain the beans into a strainer and rinse well with water. (This will reduce the sodium level in the beans), then dump the beans in the crock pot.
- 5. Next, dump the rest of your veggies, rice, raw chicken livers and bone broth into the crock pot.
- 6. In a skillet, ground the turkey (Turkey is optional), then place the ground turkey into the crock pot.
- 7. Cook on high in the crock pot for approximately 8 hours or until the rice is tender.
- 8. Once the stew is ready, crack the eggs and stir into mixture. You can crush the egg shells into the mixture for added calcium. I usually rinse the egg shells, bake them and place in a blender to make a powder to add. either way is fine.
- 9. Allow the egg to cook for an additional 15 minutes.
- 10. Scoop out to set some aside to cool and sit back and watch your pups drool over their much anticipated dinner. This will make multiple servings. We measure out 1 cup and place into zip lock bags and freeze.

- Preheat the oven to 350 degrees F.
- Poke the potatoes all over with a fork and nuke in the microwave for 15 minutes.
- Alternatively, you can bake them in the oven for 1 hour.
- Let cool until you can handle them with your bare hands.
- Trust me on this one, you don't want to be playing hot potato.
- Cut each potato in half.
- Pare off a tiny sliver of what will become the bottom of your potato, so it can stand on its own and not roll around.
- Scoop out the flesh and leave just a small layer of potato around the shell.
- Use the scooped out potato to make mashed potato, or save for another use, but you're not going to need it for this recipe.
- Line the 4 potato shells with the wilted spinach leaves.
- Crack each egg into a potato shell.
- Make sure the yolk doesn't break (you may want to crack the egg into a cup first and then gently pour it into the potato.
- Season with salt and pepper to taste.
- Top with grated cheese.
- Place the potatoes on a baking sheet (good idea to line it first with parchment paper).
- Bake in the oven until the eggs are set and the cheese is melted (about 20 minutes).
- In the meantime, make the salsa by combining all the ingredients.
- You can make it as chunky or as smooth as you like.
- Serve the potatoes with some salsa on the side.

- 1. Put the ham and onion in a large pot and cover with water and boil for 1 1/2 hours; if required add extra water while cooking to keep the ham covered.

- 2. Chef's Note: Some people like their mushrooms with more of a bite to them. If that's the case quarter them; instead of thinly slicing.

- 5. Sauté until the veggies are tender and just starting to crisp.

- 10. Add the cubed chicken and peas, and return the pan to a light simmer.
- 11. Chef's Note: If you happen to be making this dish around Thanksgiving, and you're not sure what to do with the leftover turkey... Well, here ya' go.
- 12. Continue to simmer for an additional 2 minutes.
- 13. Serve over toast, good homemade biscuits, or my Wholesome Cheddar Waffles... or whatever you choose. Enjoy.

- Let cook for a few minutes to be sure the beef is done.
- Salt and pepper to taste.

- I find that the more I make this, the more veggies I add. I now add celery with the carrot, onion and potato, and after it's done (beef is cooked), I'll add corn or peas, or leftover spinach/kale/greens whatever, even leftover rice or barley pilaf~~~Since being laid off 2 years ago, there's not an awful lot that I waste! And it still comes out great, and I still love the original one!
