Steps:
- Preheat the oven to 375˚ F. Line 2 baking sheets with parchment paper and coat with cooking spray. Mix the cake mix, vegetable oil and eggs in a large bowl until combined. Stir in the sprinkles.
- Using a 2-tablespoon ice cream scoop, dollop scoops of the batter on the baking sheets, about 2 inches apart. Dampen your fingers with a little water; press and smooth the tops of each dollop so that they are flattened slightly and even on top. Bake until they are golden and springy to the touch, 12 to 15 minutes. Let cool completely on the baking sheets.

Pour some sprinkles into a shallow bowl or rimmed plate, then roll the sides of the sandwiches in the sprinkles until the exposed ice cream is coated. Freeze until ready to serve.

CONFETTI TEA SANDWICH SPREAD
This spread is an old standby for church "eatin' meetings" or showers. Fresh veggies give it the wonderful crunch! I've used every bread imaginable to make the sandwiches, including raisin bread. The flavors compliment most breads very well.

Tips:
- Choose the right bread. A light and fluffy bread, such as white bread or brioche, is best for tea sandwiches. Avoid using a heavy or dense bread, as it will make the sandwiches difficult to eat.
- Cut the bread thinly. The bread should be cut into very thin slices, about 1/4-inch thick. This will make the sandwiches easier to assemble and eat.
- Use a variety of fillings. There are many different fillings that can be used for tea sandwiches, such as cucumber, ham, cheese, egg salad, and tuna salad. Get creative and experiment with different flavors and combinations.
- Spread the filling evenly. When spreading the filling on the bread, be sure to do so evenly. This will help to prevent the sandwiches from becoming soggy.
- Press the sandwiches together gently. Once the sandwiches are assembled, press them together gently to help them hold together. Avoid pressing too hard, as this could make the bread too dense.
- Chill the sandwiches before serving. Chilling the sandwiches before serving will help them to set and make them easier to eat. You can chill the sandwiches for up to 2 hours before serving.
Conclusion:
Confetti tea sandwiches are a delicious and easy-to-make party food. They are perfect for any occasion, from a baby shower to a birthday party. With a variety of fillings to choose from, there is sure to be a confetti tea sandwich that everyone will enjoy. So next time you are looking for a fun and festive party food, give confetti tea sandwiches a try.
