2 cups cooked rice, cooled
2 cups cubed cooked chicken
1/2 cup chopped celery
1/3 cup slivered almonds, toasted
1/3 cup raisins
1/4 cup chopped green onions
2/3 cup mayonnaise
1 tablespoon Dijon mustard
3/4 teaspoon curry powder
1/4 teaspoon salt

1 cup uncooked long grain rice
1 tablespoon butter
1 teaspoon salt, optional
1 cup frozen peas, partially cooked
1 cup thinly sliced celery
4 green onions, sliced

2 cups vegetable stock
Kosher salt and freshly ground black pepper
1/2 cup chopped dried apricots
1 large shallot, thinly sliced
2 tablespoons apple cider vinegar
1 teaspoon curry powder
1 teaspoon honey
6 tablespoons extra-virgin olive oil
3 cups baby arugula
1/2 cup toasted pine nuts
2 tablespoons chopped fresh mint

Steps:

2 1/2 cups reduced-sodium chicken broth
1 tablespoon butter
reduced-sodium chicken broth (enough to cover 4 chicken breasts)
4 chicken breasts (optional)
1 cup celery, chopped
1/2 cup green bell pepper, chopped
2 green onions, chopped
1/2 cup golden raisin
1/2 cup slivered almonds, toasted
1/4 cup reduced-fat mayonnaise
1/4 cup reduced-fat sour cream or 1/4 cup whole yogurt
1 garlic clove, pressed
3 teaspoons curry powder

1 tbsp olive or rapeseed oil
1 onion , chopped
2 tbsp mild curry paste (we used korma paste)
1 tsp ground turmeric
300g basmati rice
50g raisins
1 chicken or vegetable stock cube
3 eggs
small bunch of coriander , leaves picked
30g flaked almonds , toasted
2 carrots , grated or finely shredded
½ cucumber , sliced

Steps:

  • Heat the oil in a large pan and cook the onion for 8-10 mins until soft and just turning golden. Boil the kettle. Stir the curry paste, ground turmeric, rice and raisins into the onions. Crumble over the stock cube and pour over enough boiled water from the kettle to cover the rice by ½cm (about 1 litre). Season with some salt. Bring to a gentle simmer, then cover the pan, reduce the heat to its lowest setting and cook for 2 mins more. Without taking off the lid, remove from the heat and leave to steam for 15 mins. This will give you perfect, fluffy rice.
  • Meanwhile, bring another pan of water to the boil and cook the eggs for 7 mins. Plunge into a bowl of cold water to stop them cooking and once cool, drain and halve.
  • Tip the rice into a container and chill for at least 1 hr, or up to two days. When you're ready to serve, scatter over the coriander and almonds, and top with the grated carrot, cucumber slices and eggs.

When we lived at Fort Polk, another military wife, Claire, shared this recipe with me after I tasted it at a dinner party she hosted. It is now one of my favorite salads and I am so thankful that she was gracious enough to share her recipe. Prep time assumes you are starting with precooked rice. Cook time is actually the chilling time (although it can chill overnight as well). This makes 6 generous portions or more smaller ones.

4 large fresh mushrooms, thinly sliced
2 teaspoons olive oil or 2 teaspoons canola oil
2 small fresh zucchini (quartered lengthwise then cut into 1/2 inch thin slices)
3 green onions, minced
1 cup long grain white rice, precooked and cooled
1/3 cup red bell pepper, finely chopped
2 tablespoons fresh parsley, minced
green leaf lettuce leaf, garnish
1 tablespoon dry sherry (real stuff - NOT cooking sherry)
3 tablespoons fresh lemon juice
1 teaspoon salt
1/8 teaspoon cayenne pepper
1 teaspoon mild curry powder
1/3 cup canola oil

Steps:

  • In a skillet, saute mushrooms in oil over medium heat, stirring often, for about 2 minutes or until soft.
  • Add zucchini slices and green onions and cook, stirring, for about 1 minute (you want the zucchini to still be a bit crisp).
  • Remove cooked veggies into a large mixing bowl and combine with cooked rice, red bell pepper, and parsley.
  • In a small bowl, combine all dressing ingredients except oil.
