CONTEST-WINNING ROASTED TOMATO SOUP

Contest-Winning Roasted Tomato Soup image

Just before the first frost of the season, we gather up all of the tomatoes from my mom's garden to create this flavor-packed soup. Although it sounds like a lot of garlic, when it's roasted, the garlic becomes mellow and almost sweet. We serve this soup with toasted bread spread with pesto.-Kaitlyn Lerdahl, Madison, Wisconsin

BEST TOMATO SOUP EVER

Best Tomato Soup Ever image

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 25m

Yield 6 to 8 servings

Number Of Ingredients 11

1 medium white or yellow onion
6 tablespoons (3/4 stick) butter
Two 14.5-ounce cans diced tomatoes
One 46-ounce bottle or can tomato juice
3 to 6 tablespoons sugar
1 or 2 tablespoons chicken base, or 3 chicken bouillon cubes
Freshly ground black pepper
1 cup sherry, optional
1 1/2 cups heavy cream
1/4 cup chopped fresh basil
1/4 cup chopped flat-leaf parsley

Steps:

  • To begin, dice the onion. Melt the butter in a large pot or Dutch oven. Throw in the onion and cook until translucent.
  • Now dump in the diced tomatoes and stir to combine. Add the tomato juice.
  • Next - and this is important - in order to combat the acidity of the tomatoes add 3 to 6 tablespoons of sugar. Now, you'll want to start on the low side, then taste and add more as needed. Some tomatoes and juice have more of an acidic bite than others. (For what it's worth, and I realize it's not worth much, I use 6 tablespoons of sugar.)
  • Next, add 1 or 2 tablespoons chicken base to the pot. I added 3, and it wound up being a little too much.
  • Now you can add lots of freshly ground black pepper. Stir to combine, then heat almost to a boil. Then turn off the heat.
  • Add in the sherry if desired. Stir in the cream. Add the basil and parsley and stir.
  • Serve the soup warm!

This robust soup is a family favorite, and it's a big hit with my canasta group as well. I top each bowl with a slice of toasted bread and cheese, but you can have fun incorporating other pizza toppings such as cooked sausage. -Jackie Brossard Kitchener, Ontario

Tips:

  • Fresh tomatoes are key: Use ripe, flavorful tomatoes for the best taste. If you don't have access to fresh tomatoes, you can use canned tomatoes, but be sure to drain them well and rinse them before using.
  • Roast the tomatoes: Roasting the tomatoes intensifies their flavor and gives the soup a smoky depth of flavor. If you don't have time to roast the tomatoes, you can skip this step, but the soup will not be as flavorful.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality broth. You can use chicken broth, vegetable broth, or even water, but the flavor of the soup will be best if you use a flavorful broth.
  • Add some cream or milk: Adding some cream or milk to the soup will make it richer and creamier. You can also use coconut milk or yogurt if you prefer. If you have dietary restrictions or allergies, you can omit the cream all together.
  • Season the soup to taste: Be sure to season the soup to taste with salt and pepper. You may also want to add some other herbs and spices, such as basil, oregano, or thyme.

Conclusion:

This fresh tomato soup is a delicious and easy-to-make recipe that is perfect for a quick and healthy meal. The soup is packed with flavor from the roasted tomatoes, the flavorful broth, and the fresh herbs. It's also a good source of vitamins and minerals, making it a healthy choice for the whole family.
