1 cup crumbled feta cheese
1/2 cup kalamata olive, chopped (I usually use chopped salad olives)
1 teaspoon dried oregano
1 teaspoon italian seasoning
1 teaspoon dried parsley
1 teaspoon dried basil (optional)
1 teaspoon onion powder
1/2 teaspoon garlic powder
ground black pepper, to taste

Steps:

  • Combine all the ingredients in a large bowl.
  • Form into 4 patties, then grill.

1 ½ pounds 93% lean ground turkey
1 tablespoon minced garlic
1 teaspoon ground cumin
2 teaspoons dried oregano
1/3 cup Kalamata olives (finely chopped)
3 ounces crumbled feta cheese
1 cup finely chopped and packed fresh spinach
Pinch each of sea salt and black pepper
Olive oil spray

Steps:

  • Preheat the oven to 420°F.
  • Add all the ingredients to a large bowl and mix together thoroughly.
  • Scoop out a large fistful of meat, roll it into a ball, then flatten it to form a patty around 1 ½ inches thick. Repeat with the remaining meat to make 5 large patties of equal size.
  • Once the patties are formed, use your thumb to make a shallow indentation in the middle of each patty to prevent them from forming a dome as they cook.
  • Set a large oven-safe nonstick skillet over medium-high heat and spray lightly with olive oil. When the skillet is hot, add the patties.

1 large egg yolk
3/4 teaspoon dried oregano
1/2 teaspoon kosher salt
A few grinds black pepper
1 red onion
4 pitas with pockets
2 tablespoons olive oil
One 16-ounce package store-bought tzatziki
1/2 head Boston lettuce
1/2 medium seedless cucumber, chopped
One 4-ounce package crumbled feta (about 3/4 cup)
Potato chips, for serving

Steps:

  • Preheat the oven to 250 degrees F.
  • Place the turkey, egg yolk, oregano, salt and pepper in a large bowl. Grate half the red onion and add it to the bowl. Mix with your hands, then form into four 1/2-inch-thick patties. Place on a sheet pan or plate lined with parchment paper.

After several attempts of trial and error - I have come up with a flavorful, juicy burger that has made it into our regular rotation of meals. Makes 5-6 large, thick burgers. Watch closely when cooking for the first time, because the ricotta - which adds the extra moisture - can burn easily.

2 lbs ground turkey (I use 7% fat rather than fat free)
3/4 teaspoon salt
1/2 teaspoon cracked black pepper
4 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
4 teaspoons Dijon mustard
2/3 cup ricotta cheese

Steps:

  • Mix all ingredients together with hands.
