Time 40m

Number Of Ingredients 5

1/2 cup extra-virgin olive oil
3 garlic cloves (peeled and crushed)
6 unpeeled waxy potatoes* (quartered lengthwise)
Kosher salt and freshly ground black pepper
2 sprigs rosemary (chopped if desired (optional))

Steps:

  • Prepare the grill for direct cooking over high heat so it maintains a steady temperature of 500º F (260ºC).
  • Pour the oil and garlic in a large flameproof roasting pan. Place the pan on the grill grate, close the lid, and let it heat until the oil begins to shimmer, about 2 minutes.
  • Carefully add the potatoes to the pan and gently stir to coat with the oil. Close the lid on the grill and let the potatoes roast, keeping the lid closed except to occasionally turn the potatoes with a thin metal spatula, until they're golden brown and tender, 20 to 25 minutes.
  • Season the potatoes to taste with salt and pepper and, if desired, a sprinkle of rosemary. Using a slotted spoon, move the potatoes into a bowl or platter and serve hot.

GRILLED RED POTATOES AND ONIONS

Grilled Red Potatoes and Onions image

Provided by Anne Burrell

Categories     side-dish

Time 30m

Yield 4 servings

Number Of Ingredients 7

4 large red-skinned potatoes, scrubbed and cut into 1/2-inch rounds
1 red onion, peeled and cut into 1/2-inch rounds
1 sprig rosemary, leaves finely chopped
2 cloves garlic, smashed
Pinch crushed red pepper flakes
Kosher salt
Extra-virgin olive oil

Steps:

  • Preheat the grill and brush with a metal grill brush to loosen any crud and soot. After the grill has been brushed, run an oiled towel over the grill to pick up any loosened crud.
  • In a large bowl, toss the potatoes and onions together with the rosemary, garlic, crushed red pepper, salt, to taste, and a little olive oil. Try to keep the onions together in rounds, they will fall apart while grilling but try and keep them together as long as possible; it just makes things easier.
  • Arrange the potatoes and onions on the preheated grill. Once the potatoes have developed lovely grill marks, rotate them a quarter turn to create a lovely crosshatch pattern, (dont worry about the onions, they fall apart and you wont see the marks). Turn the potatoes over and repeat the process, turn the onions over to cook the other side as well. Cook the potatoes and onions until they are soft all the way through, about 8 to 10 minutes on each side.
  • Remove from the grill and serve hot or at room temperature.
  • Who knew you could grill a potato!

Tips:

  • Choose the Right Potatoes: Select firm and evenly sized red potatoes for grilling. Small to medium-sized potatoes cook more evenly and quickly.
  • Wash and Dry: Thoroughly wash the potatoes under cold running water to remove dirt and debris. Pat them dry with a clean kitchen towel before grilling to prevent excess water from steaming the potatoes.
  • Season Generously: Before grilling, season the potatoes liberally with salt, pepper, and other desired seasonings. This will enhance their flavor and make them more enjoyable.
  • Use High Heat: Preheat your grill to medium-high heat (around 400°F/200°C). High heat will help create a crispy exterior while keeping the insides tender.
  • Grill in a Single Layer: Avoid overcrowding the grill. Place the potatoes in a single layer to ensure even cooking. Overcrowding can lead to uneven cooking and soggy potatoes.
  • Flip Occasionally: Use a spatula to gently flip the potatoes every 5-7 minutes to promote even cooking and prevent burning.
  • Check for Tenderness: To check if the potatoes are done, insert a fork or skewer into the center. If it goes through easily, the potatoes are tender and ready to serve.
  • Serve Immediately: Grilled red potatoes are best enjoyed hot off the grill. Serve them immediately with your favorite dipping sauce, such as ranch dressing or barbecue sauce.

Conclusion:

Grilling red potatoes is an easy and delicious way to enjoy this versatile vegetable. With their crispy exterior and tender interior, grilled red potatoes are a perfect side dish for any summer gathering.
