COOLER THAN A CUCUMBER SALAD
This recipe may be simple but its flavor is big and juicy. I think it would be fabulous alongside spicy Asian curries, quick stir-fries, herb-roasted dinners -- and yes, it would be perfect for picnics. This is a delicious make-ahead picnic salad. Make more than you think you'll need, because you just might want some for breakfast.

Steps:
- Place the cucumber chunks and slices in a large bowl with the tomato and onion. Whisk together the champagne vinegar, balsamic vinegar, olive oil, agave nectar, salt, and pepper in a small bowl until frothy. Pour dressing over the vegetables. Gently toss to coat. Cover and refrigerate for at least 1 hour before serving.

COOL AS A CUCUMBER SALAD (GRAND PRIZE WINNER)
This recipe was just printed in our local Coastal Point weekly in the section, "Marie Cooks". This recipe won not only the salads category in an Iowa dairy contest, but also the sweepstakes prize. I'm posting it here for future reference. Use a pretty 1-quart glass dish for molding the salad. When unmolded on a plate, she garnished the top with a ring of thin cucumber slices, filled the center with sliced strawberries, and placed sprigs of parsley around the base. Very attractive! Note: Chill time should be no less than 2 -3hours.

Steps:
- Soften gelatin in cold water; set aside.
- Combine hot water and sugar in small saucepan. Heat to the boiling point.
- Remove from heat. Add softened gelatin, stirring to dissolve. Pour in medium bowl and chill until slightly thickened.
- Fold in cucumber, sour cream, lemon juice, onion and juice and salt.
- Pour into mold and chill until firm.
- Unmold and garnish as desired.

- Using a vegetable peeler, peel alternating strips of green skin off the cucumbers. Using a mandoline or the slicing disk of a food processor, thinly slice cucumbers and transfer to a large bowl; add shallots and set aside.
- In a small bowl, whisk together sugar, salt, and vinegar until sugar and salt have completely dissolved. Pour sugar mixture over cucumber mixture and mix, making sure none of the slices stick together. Transfer cucumber mixture and liquid to a nonreactive container and cover tightly. Refrigerate, tossing occasionally, at least 3 hours and up to five days.

My wonderful mother-n-law gave me this recipe and it is always requested for picnics or family get togethers. The herbs can be subbed at your discretion, or added to the original recipe. Enjoy ** time does not include refrigeration time

- slice onions thin add to cucumber mix and.
- blend together.
- add s & p to taste.
