1 1/2 cups celery, finely chopped
1 cup toasted slivered almonds
1 teaspoon salt
4 tablespoons grated onions
1 cup chopped green pepper
1 cup mayonnaise

1 (10 1/2 ounce) can cream of chicken soup
2 hard-boiled eggs

1 cup chicken stock
1 3-inch piece ginger, peeled
2 medium cloves garlic, peeled and minced
2 teaspoons salt
2 tablespoons sugar
1 small dried red pepper, crushed, or 1/2 teaspoon hot-red-pepper flakes
3 tablespoons soy sauce
juice of 1/2 lemon
2 scallions, thinly sliced
1/4 cup chopped pickled red ginger slices, plus 2 tablespoons of their syrup (available in Asian groceries)
2 tablespoons toasted sesame seeds
4 tablespoons sesame oil
3 cups vegetable oil
6 fresh egg roll wrappers, cut into 2- inch ribbons
1 1/2 ounces rice vermicelli
1 cup cooked shredded chicken
1/2 head iceberg lettuce, cored and cut into thin strips
1 bunch fresh coriander, coarsely chopped
1 cup mung-bean sprouts
7 medium scallions, coarsely chopped
1 cup sesame seeds, toasted and cooled
1 1/2 cups shaved almonds, lightly toasted and cooled
2 tablespoons of pickled red ginger syrup (available in Asian groceries)

Steps:

  • To make the dressing, heat the stock in a small saucepan. Move stock to a blender, then briefly puree a 2-inch piece of the ginger with the stock. Strain and discard the ginger.
  • Mince the remaining ginger and the garlic and add to the strained broth along with the remaining dressing ingredients and whisk to combine. Let the dressing sit for an hour.
  • To make the salad, heat the oil to 400 degrees in a deep frying pan. The oil will dimple slightly but should not smoke. Add half of the wrappers and fry, turning until golden. Drain on paper towels. Allow the oil to return to 400 degrees and repeat with remaining wrappers. Heat the oil again to 400 degrees and fry the vermicelli. The noodles will puff up and turn opaque in 5 to 10 seconds. Turn and let the other side puff up. Remove from oil and drain. Once cool, break the vermicelli into pieces about 3 inches long.
  • In a large bowl, combine the chicken, lettuce, cilantro, sprouts and scallions. Toss well. Add the dressing and toss again. Let sit for 5 minutes. Add the remaining ingredients, toss and serve.

1 ½ pounds skinless, boneless chicken breast halves
8 cups mixed spring salad greens
2 large carrots, peeled and sliced diagonally
1 cup sliced radishes
¾ cup mayonnaise

3 tablespoons honey
4 teaspoons Dijon mustard

2 bone-in skin-on chicken breast halves (about 2-1/4 lb.)
kosher salt & freshly ground black pepper
8 square wonton wrappers
vegetable oil cooking spray
2/3 cup sliced almonds
2 ounces snow peas, trimmed and cut on the diagonal into thirds (1/2 cup)
1 tablespoon white sesame seeds
1/2 small head napa cabbage, trimmed and cut crosswise into 1/2-inch-wide strips (3 - 3-1/2 cups)
1/2 romaine lettuce, heart cut crosswise into 1/2-inch-wide strips (1-1/2 - 2 cups)
3 large scallions, thinly sliced on the diagonal (white and green parts)
1/4 cup rice vinegar
1 1/2 tablespoons tamari or 1 1/2 tablespoons soy sauce
1 tablespoon sweet Asian chili sauce (like Mae Ploy)
2 teaspoons garlic cloves, minced
2 teaspoons minced fresh ginger
1/2 teaspoon kosher salt

Steps:

  • Heat the oven to 425°F Season the chicken breasts with salt and pepper. Roast on a rack set in a rimmed baking sheet or roasting pan, 40 - 45 minutes. Let cool. Remove and discard the skin and then shred the meat. Reduce the oven temperature to 375°F.
  • Stack the wonton wrappers on a cutting board and cut them into 1/2-inch-wide strips. Line a baking sheet with foil and spray lightly with cooking spray. Separate the strips, lay them on the baking sheet, and mist them lightly with the cooking spray. Sprinkle lightly with salt. Scrunch each strip to give it a wavy shape, if you like. Bake at 375°F until golden, 7 - 9 minutes. Reduce the oven heat to 350°F.
  • Spread the sliced almonds on a baking sheet and toast in the oven until golden, 6 - 8 minutes.
  • Bring a medium saucepan of salted water to a boil. Have a bowl of ice water ready. Boil the snow peas just until bright green but still crisp, about 20 seconds. Drain and transfer to the ice water to stop the cooking. Drain.
  • Put the sesame seeds in a dry skillet and shake or stir over medium heat until light golden brown, 3 - 4 minutes. Remove them from the hot pan to prevent overcooking.
  • Make the dressing and assemble the salad: In a medium bowl, combine the vinegar, tamari, sweet chile sauce, garlic, ginger, salt, hot chile sauce, and pepper. Gradually whisk in the peanut and sesame oils.
  • In a large bowl, toss the cabbage, romaine and snow peas. In another bowl, toss the chicken and scallions with 1/4 cup of the dressing. Add the chicken to the greens, and then add the sesame seeds and almonds. Toss with enough of the remaining dressing to coat well. Garnish each serving with the baked wonton strips.

1 loaf brioche or white bread, thinly sliced
3 1/2 cups homemade chicken stock, or low-sodium canned
1 twelve-ounce boneless, skinless chicken breast
1 Granny Smith apple
Juice of 1 lemon
1/2 cup celery, cut into 1/4-inch dice
1/2 cup mayonnaise
1 tablespoon freshly chopped tarragon, plus more for garnish
1 1/2 teaspoons salt

Steps:

  • Heat oven to 350 degrees. Use a 2-inch-round cookie cutter to cut about 4 dozen rounds from the brioche slices. Place rounds on a baking sheet; transfer to oven until they are barely golden, about 7 minutes, turning over halfway through cooking time.
  • Place the chicken stock in a medium saucepot, and bring to a boil. Add the chicken breast, and reduce to a simmer. Cook for about 15 minutes, until the chicken is cooked through. Drain, reserving the stock for another use, and set the chicken aside to cool. When it is cool enough to handle, shred the chicken into bite-size pieces.
  • Peel and core the apple, and cut into 1/4-inch dice. Place diced apple in a large bowl, and toss with lemon juice to coat. Add the shredded chicken, celery, mayonnaise, tarragon, salt, and pepper.
  • When ready to serve, top each brioche toast with 1 heaping teaspoon chicken salad, and garnish with a pinch of freshly chopped tarragon.

4 tbsp Vietnamese fish sauce (nuoc mam) or Thai fish sauce (nam pla)
2 boneless skinless chicken breasts
4 tbsp lime juice
1 tbsp sugar , or more to taste if liked
½ tsp coarsely ground black pepper
1 small red chilli , seeded and finely chopped
200g white cabbage , finely shredded
2 medium carrots , finely shredded
1 small onion , finely sliced
2 tbsp roughly chopped fresh mint leaves
2 tbsp roughly chopped coriander leaves
3 garlic cloves , peeled
3 plump fresh red chillies , halved and seeded
1 tbsp caster sugar
3 tbsp Vietnamese fish sauce (nuoc mam) or Thai fish sauce (nam pla)
3 tbsp rice vinegar
small bunch of fresh mint
2 tbsp salted peanut , very finely chopped

Steps:

  • Half fill a medium wok or deep frying pan with water, sprinkle in half of the fish sauce and bring to the boil. Turn down the heat to a simmer, lower the chicken into the water and cover the pan with a lid. Simmer for 10 minutes until the chicken is cooked through. Lift the chicken out of the water and leave until cool enough to handle.
  • Meanwhile, mix the remaining fish sauce in a large bowl with the lime juice, sugar, pepper and chopped chilli. Tip in the cabbage, carrots and onion. Mix well.
  • Shred the chicken and toss it into the salad with the herbs. Mix again, cover and leave to marinate in the fridge for at least 2 hours (overnight is ideal).
  • To make the nuoc cham sauce, pound the garlic, chillies and caster sugar to a paste using a pestle and mortar. Mix in the fish sauce, vinegar and 6 tbsp water. (It will keep for up to 4 days in the fridge.)
  • To serve, toss the salad, taste and add more sugar, if you like. Scatter mint leaves on each plates, pile the salad on top and sprinkle with peanuts. Serve with individual bowls of nuoc cham sauce to pour over.
