1 tablespoon sugar
4 tablespoons cold butter, cut in pieces
2 large eggs
4 tablespoons lime juice
1 lime, zest of
8 ounces cream cheese
2 tablespoons lime zest
2 tablespoons lime juice
2 cups whipping cream
1/4 cup powdered sugar
lime curd, made from recipe above
1 1/4 cups graham cracker crumbs
1/2 cup sugar
1/4 cup butter, melted

Steps:

  • Lime curd: Cook over medium heat: the sugar, butter, eggs, & lime juice, whisking until a mark holds (about 12 - 15 minutes). Stir in the zest & cool. Can be made up to one week ahead, kept in covered container.
