1/2 cup (40g) unsweetened cocoa powder
3 cups(360g) confectioners' sugar
1 tsp vanilla extract
3/4 cup (85g) dry milk powder*see note below
1/2 cup (120 ml) white corn syrup

  • 1. Note that that is dry milk powder, not instant milk. Throw all of the ingredients into one large mixing bowl and knead it until it looks like one large lump of tootsie. It will have the consistency of Play-Doh. It may not seem like there's enough moisture in there when you start, but keep with it and it should turn out just fine. To make your own rolls, just tear off a chunk of the tootsie dough, roll it up, and cut pieces off. Eat it up right there or wrap it in plastic wrap or wax paper to save it for later.

1 cup sugar
1/2 cup corn syrup
1/4 cup water
2 teaspoons vanilla - divided
1/4 teaspoon salt
3 tablespoons cocoa powder
1/2 cup powdered sugar
cooking spray
parchment paper

Steps:

  • In a medium pot, add sugar, corn syrup, water, 1 teaspoon of vanilla extract and salt and bring to a boil.
  • Using a candy thermometer heat and stir mixture until it hits 240 F. or just below hard ball stage. If doing the cold water test, drop a spoon full of sugar mixture into cold water and feel the mixture with your fingers, when it gets to a mostly firm ball, it's perfect.
  • Remove from heat and add cocoa powder and remaining 1 teaspoons vanilla extract and stir until smooth.
  • Grease a piece of parchment paper and pour mixture onto it.
  • Allow to cool then sprinkle with powdered sugar as you knead the mixture.
  • Let mixture set for a minute, the mixture will thicken and feel hard, don't worry it's not ruined! Smash the mixture in your hands and it will soften after a few squeezes. Roll into individual pieces, wrap in small parchment paper pieces and twist ends to keep them shut.

1/4 cup simple syrup (honey or corn syrup OK)

1 teaspoon vanilla extract (good quality)
1 pinch salt

Steps:

  • Sift together the cocoa powder, confectioner's sugar, dry milk and salt.
  • Whisk together corn syrup, melted butter and vanilla.
  • Stir the wet into the dry.
  • At first it will look like there isn't enough liquid. Keep going.
  • Then, using your hands knead the mixture together for a few minutes.

12 oz semisweet chocolate chips
1/2 cup light corn syrup
3/4 teaspoon warm water
1 3/4 teaspoons orange extract

Steps:

  • Line a baking tray (with sides) with plastic wrap and set aside.
  • In a medium microwave safe bowl, melt chocolate. Stop to stir every 5-10 seconds so chocolate will not burn. Add the remaining ingredients and stir well. Scrap mixture onto the prepared baking sheet and press down with the back side of a spatula to a 1″ thickness. (Paula's Note: It will not completely cover the pan). Cover mixture with another piece of plastic wrap and let it set overnight at room temperature. The mixture will be stiff, but still moldable and flexible the next day.
  • Peel off the plastic wrap and cut into strips (about 1/2″-3/4″ wide). Form each strip into a log and roll out the logs between your hands or on your work surface until they are about 1/2″ in diameter. Cut into sections as long as you like and set aside for a few minutes to harden up again after you have heated them with your hands. Wrap in waxed paper or colored foil squares.
