This is a copycat version of Applebee's famous quesadillas. Using the Pico de Gallo recipe #83371 (thank you EdsGirl), you won't be able to tell the difference between these and the ones from the restaurant. Please note, the recipe is for one serving, adjust accordingly to suit your needs.

1 tablespoon hormel real bacon bits (black label)
2 8-inch flour tortillas
softened butter (for spreading on tortillas)
1 tablespoon pico de gallo
1/4 cup shredded colby-monterey jack cheese
sour cream, for dipping (optional)
salsa, for dipping (optional)
guacamole, for dipping (optional)

Steps:

  • Be sure to have everything handy, as these move quickly.
  • Spread butter lightly on one side of flour tortilla.
  • Place buttered side down on heated non-stick skillet.
  • Immediately add bacon bits, cover with cheese and spoon on pico de gallo.
  • Spread butter lightly on one side of another flour tortilla.
  • Place second tortilla buttered side UP on top of fixings in skillet.
  • Check underside of first flour tortilla.
  • If browned to your satisfaction, carefully flip quesadilla over to brown second tortilla.
  • When second tortilla is browned sufficiently, remove quesadilla from skillet.
  • Serve warm, with dipping condiments of your choice.

1/2 ounce shortening
2 (12 inch) flour tortillas
2 tablespoons chipotle hot sauce
4 ounces grilled chicken (seasoning optional)
1 cup lettuce, shredded
4 ounces sour cream
2 ounces green onions
4 ounces salsa

Steps:

  • Brush one side of each tortilla with shortening.
  • Place one tortilla, shortening side down on work surface. Spread chipotle sauce evenly on one tortilla.
  • If chicken was not freshly grilled, then microwave chicken approximately 45 seconds, then distribute evenly on top of sauce on tortilla.
  • Evenly put Quesa Filling on top of chicken. Then, cover with the other tortilla, shortening side up.
  • Brown on griddle or in non stick pan evenly on both sides until internal filling is thoroughly heated.
  • Use shredded lettuce, sour cream, green onion and salsa as accompaniments. I like to add crumbled bacon on top.

I have never eaten Applebees Quesadilla burgers but I can say that these burgers are awesome! You can adapt this to make as many burgers as you need. I used a little over a pound of hamburger for 4 burgers and had left over seasoning.

2 (10 inch) flour tortillas
2 tablespoons butter, softened
1/3 cup shredded monterey jack pepper cheese
1/3 cup shredded cheddar cheese
diced onion
diced canned jalapeno
bacon (cooked and crumbled)
southwest seasoned hamburger (recipe follows)
2 teaspoons ground cumin
2 tablespoons paprika
1 teaspoon black pepper
1 teaspoon cayenne pepper
crushed red pepper flakes (to taste)
1 teaspoon salt (I didnt measure)
1 tablespoon dried oregano

Steps:

  • For hamburgers:.
  • Combine all seasoning ingredrients. Use one heaping Tblsp of seasoning mix per pound of hamburger meat. Mix into hamburger meat until well combined. Fry or grill. ( I used George Foreman grill).
  • Assembling the complete burger:.
  • Heat a large frying pan over medium heat. Spread butter on one side of each tortilla. Put one tortilla, butter side down in the hot pan. Sprinkle the cheeses evenly onto the center of the tortilla in the pan- but not all the way to the edges. Put the tomato, onion, bacon and jalapeno over the cheese, add the cooked seasoned burger and cover with the other tortilla butter side up (like a grilled cheese sandwhich). When the bottom is browned, about 45-90 seconds, flip the quesadilla and grill the other side. Remove the quesidilla from the pan and using a pizza cutter, cut throught the middle. Serve.
