1 cup all-purpose flour
1 Tablespoon sugar
1 teaspoon baking powder
2 large eggs, lightly beaten
3/4 cup heavy cream
Vegetable oil, for frying
Sliced scallions, for serving

Steps:

  • Whisk 3/4 cup flour, 1 teaspoon kosher salt and 1/4 teaspoon each baking powder and pepper in a bowl. Whisk 1/2 cup milk and 2 eggs in another bowl; stir in the flour mixture. Add 2 cups corn, 1/4 cup each chopped cilantro and scallions, 1 chopped jalapeno and the zest and juice of 1/2 lime. Cook 1/4 cupfuls in a skillet with olive oil, 2 minutes per side. Serve with Greek yogurt.

Tips:

  • Use fresh corn: Fresh corn will give your fritters the best flavor. If you can't find fresh corn, you can use frozen or canned corn, but the flavor will not be as good.
  • Don't overmix the batter: Overmixing the batter will make your fritters tough. Mix the batter just until the ingredients are combined.
  • Cook the fritters over medium heat: Cooking the fritters over medium heat will help them cook evenly and prevent them from burning.
  • Serve the fritters hot: Corn fritters are best served hot. You can serve them with maple syrup, honey, or your favorite dipping sauce.

Conclusion:

Corn fritters are a delicious and easy-to-make side dish that can be enjoyed by people of all ages. They are perfect for summer cookouts, potlucks, or any other casual gathering. With a few simple ingredients and a little bit of time, you can make a batch of corn fritters that will be sure to please everyone.
