Categories     main-dish

Time 1h15m

Yield 8 servings

Number Of Ingredients 16

2 tablespoons canola oil
2 tablespoons all-purpose flour
One 28-ounce can enchilada or Mexican red sauce
2 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1 pound ground beef
1 medium onion, finely chopped
1/2 teaspoon salt
Canola oil, for frying
10 to 14 corn tortillas
Two 4-ounce cans diced green chilies
1 cup chopped green onions
1/2 cup chopped black olives
3 cups grated sharp Cheddar cheese
Cilantro, for garnish

Steps:

  • In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
  • While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
  • In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
  • Preheat the oven to 350 degrees F.
  • Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
  • Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
  • Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.

Time 1h5m

Yield 5

Number Of Ingredients 2

1 ¾ cups masa harina
1 ⅛ cups water

Steps:

  • In a medium bowl, mix together masa harina and hot water until thoroughly combined. Turn dough onto a clean surface and knead until pliable and smooth. • Preheat a cast iron skillet or griddle to medium-high.
  • Divide dough into 15 equal-size balls. Using a tortilla press, a rolling pin, or your hands, press each ball of dough flat between two sheets of plastic wrap.

Turn tortilla over to brown on second side for approximately 30 seconds more, then transfer to a plate. Repeat process with each ball of dough. AUTHENTIC MEXICAN ENCHILADAS

Authentic Mexican Enchiladas image

This is the real thing! Corn tortillas are dipped in a home made sauce, fried, filled with Mexican queso fresco, then topped with sour cream, lettuce and tomato. My mother in law is from Mexico and taught me to make this delicious dish! Serve with authentic refried beans, it has a taste different from the norm--so good!

Provided by Becky

Categories     World Cuisine Recipes     Latin American     Mexican

Time 45m

Yield 6

Number Of Ingredients 11

6 dried chile de arbol peppers
1 clove garlic
1 teaspoon salt
¾ cup water
1 cup vegetable oil for frying
18 (6 inch) corn tortillas
3 cups crumbled queso fresco
1 cup sour cream
1 cup shredded lettuce
2 medium tomatoes, thinly sliced
½ cup chopped green onions

Steps:

  • Snap the tops off of the dried chilies, and place in a saucepan with enough water to cover. Bring to a boil, and simmer for 15 minutes. Drain the water, and place chilies into a food processor or blender with the garlic and salt. Puree until smooth. Press sauce through a strainer, and set aside.
  • Heat the oil in a large skillet over medium heat. Soak each tortilla in the sauce, then place in the hot oil. Turn over almost immediately, and fry for about 5 seconds on the other side. Remove to a plate that is lined with paper towels. The easiest way to do this is to fry the tortillas and stack them directly on top of each other until you have fried them all. This will keep the tortillas pliable until you are ready to fill them.
  • Take one fried tortilla at a time, and fill with about 2 tablespoons of the queso fresco. Roll up, and place seam side down on a plate. Place three of these on each plate. Top in the following order: Start with a layer of sour cream, then a small handful of lettuce, three tomato slices, 2 more tablespoons of queso fresco, and finally, 1 tablespoon of green onions.

CHICKEN AND CORN ENCHILADAS

Chicken and Corn Enchiladas image

From Bon Appetit The Christmas Season cookbook. This makes a lot and sounds like it would work well for a buffet and you can make them one day ahead.

Provided by lazyme

Categories     Chicken Breast

Time 1h5m

Yield 16 serving(s)

Number Of Ingredients 10

3 cups cooked chicken, shredded
1 1/2 cups red onions, sliced
1 1/2 cups frozen corn kernels, thawed
1/4 cup sour cream
1/2 cup fresh cilantro, chopped
1 teaspoon ground cumin
2 cups monterey jack pepper cheese, hot and grated (about 8 ounces)
3 cups salsa, purchased thick and chunky mild
3 cups red enchilada sauce
16 (6 inch) corn tortillas

Steps:

  • Lightly oil 15x10x2-inch glass baking dish.
  • Mix first 6 ingredients and 1 cup cheese in medium bowl.
  • Season chicken filling to taste with salt and pepper.
  • Mix salsa and enchilada sauce in large bowl.
  • Heat heavy medium skillet over high heat.
  • Add 1 tortilla and cook until heated through, about 10 seconds per side.
  • Brush tortilla with some of sauce mixture.
  • Spoon 1/3 cup chicken filling into center of tortilla.
  • Roll up.
  • Place seam side down in prepared baking dish.
  • Repeat with remaining tortillas, some sauce and remaining filling.
  • (Can be made 1 day ahead. Cover and chill enchiladas and remaining sauce separately).
  • Preheat oven to 350ºF.
  • Spoon remaining sauce over enchiladas.
  • Sprinkle with remaining 1 cup cheese.
  • Cover with foil.
  • Bake until heated through, about 35 minutes (or up to 45 minutes for refrigerated enchiladas).

Tips:

  • Choose the right corn tortillas. Freshly made corn tortillas are best for enchiladas because they are soft and pliable. If you are using store-bought tortillas, be sure to heat them up so that they are soft and flexible.
  • Make sure the filling is moist. Dry filling will make the enchiladas tough and unpleasant to eat. Add plenty of sauce or other moist ingredients to the filling, such as salsa, cheese, or sour cream.
  • Don't overfill the tortillas. Overfilled tortillas will be difficult to roll and will likely fall apart when you bake them. Aim for about 1/2 cup of filling per tortilla.
  • Roll the tortillas tightly. Tightly rolled tortillas will hold their shape better when you bake them. If the tortillas are loosely rolled, they may come apart.
  • Bake the enchiladas until they are heated through. The enchiladas should be baked until the cheese is melted and the filling is hot and bubbly. This will usually take about 15-20 minutes.

Conclusion:

Corn tortilla enchiladas are a delicious and easy-to-make meal that can be enjoyed by people of all ages. With a variety of fillings and toppings to choose from, there is sure to be an enchilada recipe that everyone will love. So next time you are looking for a quick and easy meal, give corn tortilla enchiladas a try. You won't be disappointed!
