3-1/2 cups fresh corn
3 cups chopped broccoli, parboiled
2 cups sliced carrots (1/2-inch pieces), parboiled
1-1/2 cups pearl onions
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/2 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1-1/2 cups shredded cheddar cheese, divided

Steps:

  • Combine corn, broccoli, carrots and onions; place in a greased 13x9-in. baking dish. , In a bowl, combine soup, milk, Worcestershire sauce and garlic powder. Add 1 cup cheese. Pour over vegetables. Top with remaining cheese. Bake at 350° for 35-40 minutes or until bubbly and heated through.

6 cups fresh corn kernels
Salt and black pepper
1/2 teaspoon ground nutmeg
2 tablespoons vegetable oil
2 cups chopped onions
6 whole eggs, beaten
1 cup milk
2 cups grated aged white cheddar
2 teaspoons oil

  • Preheat the oven to 350 degrees F.
  • Carefully remove the corn from the cob with a knife and put in a food processor. Transfer to a large bowl. Coarsely puree with salt, pepper, and nutmeg. 1/4 cup margarine
8 ounces frozen mixed vegetables
1 (19 ounce) can cream-style corn
1 1/2 teaspoons baking powder
1/2 cup flour
3 eggs, beaten
1/2 cup milk
1 teaspoon salt
1 teaspoon garlic, minced
1/2 teaspoon black pepper (or to taste)
2 jalapenos, seeded & diced small
2 ounces of drained pimientos (optional)
8 ounces muenster cheese, grated (reserve 2 oz)
1 tomatoes, very thinly sliced
cooking spray

Steps:

  • Heat oven to 350. Spray rectangular glass casserole pan with cooking spray.

5 tablespoons butter, divided
2 cups sliced fresh mushrooms
1 medium sweet red pepper, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 garlic clove, minced
1 package (16 ounces) frozen corn, thawed
2 cups shredded Colby-Monterey Jack cheese
2 teaspoons brown sugar
1/2 cup dry bread crumbs
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 375°. In a large skillet, saute onion in 2 tablespoons butter until tender. Add the mushrooms, red pepper, salt and pepper; cook and stir until vegetables are tender, 5 minutes. 1 tablespoon extra virgin olive oil
1 medium onion, finely chopped
1 medium red bell pepper, diced
Salt to taste
1 large garlic clove, minced
1/2 pound zucchini, thinly sliced or diced
Freshly ground pepper to taste
Kernels from 2 ears sweet corn (about 2 cups)
3 large eggs
1/2 cup milk
1 teaspoon cumin seeds, lightly toasted and coarsely ground in a spice mill, or slightly crushed in a mortar and pestle
2 ounces Gruyère cheese, grated (1/2 cup, tightly packed)

Steps:

  • Preheat the oven to 375 degrees. Oil a 2-quart gratin or baking dish. Set aside the kernels from one of the ears of corn. Heat the olive oil in a large, nonstick skillet over medium heat and add the onion. Cook, stirring often, until it begins to soften, about three minutes, and add the red pepper and a generous pinch of salt. Cook, stirring often, until the onions and peppers are tender, about five minutes. Add the garlic and the zucchini, stir together and add another generous pinch of salt and some pepper. Cook, stirring often, until the zucchini is just beginning to look bright green and some of the slices are translucent. Stir in the kernels from one of the ears of corn.
