1-1/2 pounds ground beef
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (8 ounces) tomato sauce
1/2 cup water
1/2 cup chopped green pepper
1 envelope taco seasoning
1 package (8-1/2 ounces) cornbread/muffin mix
1 can (2.8 ounces) french-fried onions, divided
1/3 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the corn, tomato sauce, water, green pepper and taco seasoning. Spoon into a greased 2-qt. baking dish., Prepare cornbread mix according to package directions for cornbread. Stir in half of the onions. Spread over beef mixture. Bake, uncovered, at 400° for 20 minutes. , Sprinkle with cheese and remaining onions. Bake until cheese is melted and a toothpick inserted into cornbread layer comes out clean, 3-5 minutes longer.

1 1/2 lbs ground beef, cooked and drained
1/4 cup of chopped onion
1 (8 ounce) can tomato sauce
1 (15 ounce) can whole kernel corn, drained
1/2 cup water
3 tablespoons taco seasoning (1 package)
1 (8 ounce) package cornbread mix
1/3 cup shredded sharp cheddar cheese or 1/3 cup shredded Mexican blend cheese

Steps:

  • After cooking and draining the ground beef, add the onions, tomato sauce, corn, water, and taco seasoning.
  • Spoon into a greased 2 1/2 quart baking dish.
  • Prepare the corn bread according to the package directions. Pour over the beef mixture.
  • Bake uncovered at 400 degrees for 20 minutes or until the cornbread is done.

1 (15 1/2 ounce) can chili (without meat)
2 cups colby or 2 cups monterey jack cheese
2 (8 1/2 ounce) packages corn muffin mix
1 (11 ounce) can mexicorn, Mexican style, drained
3 tomatoes, chopped (optional)
olive, sliced (optional)
sour cream (optional)

Steps:

  • Preheat oven to 375.
  • in skillet cook ground beef over medium heat unntil beef is no longer pink; drain.
  • add taco seasoning mix and prepare according to package directions.
  • stir in chili and 1 cup of the cheese.
  • In bowl, prepare corn muffin mix according to package directions.
  • Stir in corn and remaining 1 cup of cheese.
  • spoon ground beef mixture evenly onto bottom of baking dish.
  • top wiwth cornbread mixture spreading evenly to edges of pan.
  • bake 15-20 minutes or until golden brown.
  • cut into 12 squares.
  • top with tomatoes, sliced olives, and sour cream, if desired.

1 lb ground beef lean
2 Tbsp taco seasoning in can or use packet
1/3 c water
1 can(s) rotel diced tomatoes and chiles
1 can(s) black beans rinsed
1 box jiffy corn bread mix, plus ingredients to make cornbread
1 c shredded cheddar cheese
salsa, chunky for topping
sour cream, optional

Steps:

  • 1. Preheat oven to 400 degrees. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the water and taco seasoning. Simmer for 5 minutes.
  • 2. Stir in 1/2 cup cheese, Rotel tomatoes and black beans. Prepare cornbread according to package and mix with hamburger mixture. Spoon into a greased 8x8 baking dish. Bake uncovered for 20 minutes.
  • 3. Sprinkle with remaining cheese. Bake 3 to 5 minutes longer or until cheese is melted. Serve with sour cream and salsa. Or just salsa on top.

1 pkg taco seasoning (1 1/4 ounces)
1/2 c water
1 can(s) whole kernel corn, drained (12 ounces)
1/2 c chopped green pepper
1 can(s) tomato sauce (8 ounce)
1 pkg corn muffin mix (8 1/2 ounce)
1 can(s) fried onions, divided
1/3 c cheese, shredded

Steps:

  • 1. Brown the beef and drain.
  • 2. Stir in the taco sauce, water,corn, pepper, and tomato sauce.
  • 3. Pour into a 12 x 7 inch glass dish or a 2-quart casserole dish.
  • 4. In a bowl, mix the corn muffin mix according to the package directions. Then stir in half the onions.
  • 5. Spoon the corn muffin mixture around the outer edge of the casserole.
