SOUTHERN CORNMEAL-CRUSTED CATFISH

Categories     side-dish

Time 26m

Yield 4 servings

Number Of Ingredients 7

4 (4 to 6-ounce) U.S. farm-raised catfish fillets
1/4 cup buttermilk or plain, nonfat yogurt
1/2 teaspoon hot sauce
1/2 cup cornmeal
2 tablespoons butter
1 tablespoon olive oil
Salt and pepper

Steps:

  • Stir together buttermilk or yogurt and hot sauce; brush on catfish and allow to marinate for 10 minutes. Coat catfish lightly with cornmeal and sprinkle with salt and pepper, to taste.
  • Melt butter and olive oil in a nonstick skillet over medium high heat. When skillet is hot, saute catfish about 3 minutes on each side, turning only once, until golden and crisp. Serve immediately, garnished with lemon wedges and with tartar sauce as accompaniment.

Tips:

  • Choose fresh catfish fillets for the best flavor and texture.
  • If you are unable to find fresh catfish, frozen catfish fillets can be used instead. Just be sure to thaw them completely before cooking.
  • Use a light hand when breading the catfish fillets. Too much breading will make the fish greasy and heavy.
  • Be careful not to overcrowd the skillet when frying the catfish. This will cause the fish to steam instead of fry, resulting in a soggy coating.
  • Fry the catfish fillets in hot oil until they are golden brown and cooked through. This will take about 3-4 minutes per side.
  • Serve the catfish fillets immediately with your favorite dipping sauce.

Conclusion:

Cornmeal-crusted catfish is a delicious and easy-to-make dish that is perfect for any occasion. The crispy cornmeal coating pairs perfectly with the tender, flaky catfish, and the whole dish can be ready in just 30 minutes. So next time you are looking for a quick and easy weeknight meal, give cornmeal-crusted catfish a try. You won't be disappointed!
