What a tasty combination--honey and cornmeal. It makes wonderful toast in the morning and great sandwiches. I have made this for many years and it always rises perfectly into nice, round loaves. It is easy to make and not too many ingredients.

Tips:

  • Use fresh cornmeal: Fresh cornmeal will give your bread a better flavor and texture. If you can't find fresh cornmeal, you can use store-bought cornmeal, but be sure to check the expiration date.
  • Grind your own cornmeal: If you have a grain mill, you can grind your own cornmeal. This will give you the freshest and most flavorful cornmeal possible.
  • Use bread flour: Bread flour has a higher protein content than all-purpose flour, which will give your bread a chewier texture.
  • Proof the yeast: Proofing the yeast is essential for making sure that your bread rises properly. To proof the yeast, dissolve it in warm water with a little sugar and let it sit for 5-10 minutes, or until it becomes foamy.
  • Knead the dough properly: Kneading the dough is an important step in making bread. It helps to develop the gluten in the flour, which will give your bread a chewy texture. Knead the dough for at least 5 minutes, or until it is smooth and elastic.
  • Let the dough rise in a warm place: The dough needs to rise in a warm place in order to double in size. You can place the dough in a warm oven or in a sunny spot on your kitchen counter.
  • Bake the bread at a high temperature: Baking the bread at a high temperature will help to create a crispy crust. Preheat your oven to the highest temperature it can go before baking the bread.

Conclusion:

Cornmeal yeast bread is a delicious and versatile bread that can be enjoyed for breakfast, lunch, or dinner. It is also a great bread to use for sandwiches and toast. With a little planning and effort, you can easily make your own cornmeal yeast bread at home.
