Steps:
- In a large bowl combine flour, cornmeal, sugar, baking powder, and 1 teaspoon salt.
- In a medium bowl, whisk the thawed corn, egg, milk, and vegetable oil. Pour into the bowl with the dry ingredients and combine. Allow to rest for 5 minutes.
- Preheat the oven to 200 degrees F.
- In a cast iron pan on medium-high heat, add enough vegetable oil to fill the pan about 1/2-inch deep. When the oil begins to swirl, add the batter in batches to the pan using a small ice cream scoop or 1/4 cup measure to make each hoecake. Gently spread into a circle, if needed. Flip the hoecakes when the air pockets begin to pop on the surface of the batter and a peek underneath the cake reveals a golden rim and surface, about 2 minutes.
- Once the second side is golden brown, transfer the hoecakes to a baking sheet in a warm oven and continue making the rest. Serve with maple syrup.

Tips:
- To make the perfect cornmeal shortcake, use a combination of fine and coarse cornmeal. This will give the shortcake a light and fluffy texture with a slightly gritty bite.
- Be sure to use fresh corn kernels. Frozen corn kernels can be used in a pinch, but they will not give the shortcake as much flavor.
- If you don't have buttermilk on hand, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
- Don't overmix the batter. Overmixing will make the shortcake tough.
- Bake the shortcake in a hot oven. This will help it to rise and brown properly.
- Serve the shortcake warm with butter and honey, or with your favorite savory toppings.
Conclusion:
Cornmeal shortcake is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be tailored to your own taste preferences. Whether you like it sweet or savory, cornmeal shortcake is sure to be a hit. So next time you're looking for a new recipe to try, give cornmeal shortcake a try. You won't be disappointed!
