### **H3 Tag: Know Your Ingredients** - All-purpose or bread-flour: All-purpose can be used but will result in a thinner gravy, while bread-flour will thicken the gravy. - Bacon grease or butter: The author prefers bacon grease because it adds a depth of smoky and salty flavors. - Pan drippings: Brown the meat of your choice in a skillet, then remove the meat. Use the drippings left behind from the meat to create a rich and flavorful base for your gravy. - Beef broth: If you don't have pan drippings, you can make the gravy using just broth. - Garlic: Garlic adds a savory and aromatic note to the gravy. - Onion: Onions add a sweet and caramelly taste to the gravy. - Herbs and spices: Dried thyme, salt, and black or white ground peppers are the go-to herbs and spices for this recipe. - Worcestershire Sauce: Gives the gravy an umami kick. ### **H3 Tag: Cooking Process** 1. Make a roux: In a large saucepan, melt the bacon grease or butter over medium heat. Whisk in the bread or all-purpose, continuing to whisk for a minute or two until it forms a smooth, golden brown mixture. 2. Add remaining ingredients: Pour in the pan drippings (or broth), Worcestershire Sauce, and herbs and spices. Stirring often, bring the gravy to a simmer. 3. Reduce the heat to low and let the gravy simmer for at least 30 minutes, stirring every 10 minutes or so. This step is important to allow the flavors to meld and deepen. 4. Strain the gravy to remove solids: Place a fine-wire sieve over a bowl and pour the gravy through it. Use the back of a spoon to press on the solids to help release any remaining gravy. ### **H3 Tag: Serving Suggestions** - Thick gravy: Serve over mashed or roasted root-vegetables and meats. - Thin gravy: Serve as a dipping gravy or a marinade for your next dish. ### **H3 Tag: Storing and Freezing** - Store the gravy in an airtight container in the refrigerator for up to 5 days. - Freeze the gravy in a freezer-proof container for up to 3 months. ### **H3 Tag: Pro-tip** - For a creamy gravy, whisk in a tablespoon of cold butter before serving. - To enhance the flavors, add a tablespoon of red wine or port while the gravy is simmering.
