½ cup barley
½ cup dried split peas
½ cup uncooked white rice
½ cup dry lentils
2 tablespoons dried minced onion
2 tablespoons dried parsley
2 teaspoons salt
½ teaspoon lemon pepper
2 tablespoons beef bouillon granules
½ cup uncooked alphabet pasta
1 cup uncooked twist macaroni

Steps:

  • In a wide mouth 1 quart jar, layer the barley, peas, rice and lentils. Then layer around the edges the onion, parsley, salt, lemon pepper, bouillon and the alphabet pasta. Fill the rest of the jar with the twist macaroni.
  • Seal and attach a gift card. The gift card should read: Add contents of jar to 3 quarts of water, 2 stalks of chopped celery, 2 sliced carrots, 1 cup of shredded cabbage (optional) and 2 cups diced tomatoes. Over medium low heat, cover and simmer about 1 hour, or until vegetables are tender.

1 pint Mason jar
⅓ cup red lentils
1 Tbsp dried leeks
1 Tbsp dried bell peppers
1 Tbsp dried carrots
1 bay leaf
1 - 1 ¼ cups dried tortellini
1 Tbsp chicken bouillon or vegan broth powder
1 Tbsp onion powder
½ tsp black pepper
½ tsp salt
1 tsp fennel seeds
1 Tbsp dried parsley
1 tsp Spanish paprika

Steps:

  • Layer lentils, leeks, peppers, and carrots in Mason jar.
  • Place bay leaf standing up on one side of the jar.
  • Pour tortellini into jar, being careful not to overfill.
  • Add the bouillon, onion powder, pepper, salt, fennel, parsley and paprika to a small zip-top bag.
  • Seal the bag and place on top of the soup mixture.
  • Add the following directions: Add all ingredients to a large saucepan with 5 cups of water and 1 (14oz) can of diced tomatoes. Bring to a boil. Reduce heat and simmer for 15-20 minutes or until lentils and tortellini are tender. Serve topped with grated cheese or pesto. Optional additions: Add 2 cups of chopped chicken or turkey and ½ cup frozen peas.

I was a member of a professional organization and we sold this soup mix in jars to raise money. It is really good, especially in the fall and winter. I will list the instructions for using it as a fund raiser at the end of the cooking instructions. Cook time is for prep and simmer time when cooking, not preparing for fund raiser. 1 (2 3/4 ounce) package country gravy mix (Pioneer if available)
1 tablespoon chicken bouillon granule
2 teaspoons instant minced onion
2 teaspoons dried celery flakes
1 teaspoon dried parsley flakes
1/4 cup wild rice, uncooked
1 cup white rice, uncooked
2 tablespoons coarsely chopped dried mushrooms (shiitake, chanterelle or oyster)
1 (10 ounce) can chicken, drained slightly (optional)

Steps:

  • To cook; put all ingredients in a large saucepan.
  • Add 7 cups of water. Heat to boiling.
  • Reduce heat and simmer for 25-30 minutes, until rice is tender, stirring occasionally.
  • Garnish with chopped fresh parsley.
  • For fund raising, you will need 1 pint jar with lid and ring for each recipe,a decorative piece of material cut into an 8 or 10 inch circle and raffia ribbon or twine.
  • Place each ingredient in the jar in the order listed, except the chicken.
  • Place lid and ring on jar, sealing tightly by hand.
  • Place the can of chicken on top of the jar.
  • Center the circle of material on top and tie the ribbon around the material at the level of where the jar neck starts.
  • If selling these for a seasonal fund raising, try to find material appropriate for the season, such as fall or Christmas!
  • These were very popular at our fund raising!

1 cup each dried black beans, dried yellow split peas, dried green split peas, dried black-eyed peas, dried pinto beans, dried kidney beans, dried great northern beans and dried lentils
ADDITIONAL INGREDIENTS (for each batch):
1 smoked ham hock (about 1/2 pound)
1 large onion, chopped
2 medium carrots, chopped
1 celery rib, chopped
1 garlic clove, minced
1 to 2 teaspoons salt
1 teaspoon chili powder
1/4 teaspoon pepper
1-1/2 quarts water
1 can (8 ounces) tomato sauce

Steps:

  • Sort beans, peas and lentils; combine in a large bowl. Divide into four equal batches, 2 cups each. Store in airtight containers in a cool, dry place for up to 6 months. Yield: 4 batches., To make one batch of soup: Rinse bean mixture with cold water. Place in a large saucepan; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let soak for 1-4 hours or until beans are softened., Drain and rinse bean mixture, discarding liquid. Return bean mixture to pan; add remaining ingredients. Bring to a boil over medium-high heat. Reduce heat; cover and simmer for 3 hours or until beans are tender. Remove ham hock; cut meat into bite-size pieces and return to pan. Heat through.
