COWBOY BAKED BEANS RECIPE (OVEN OR SLOW COOKER)

Cowboy Baked Beans Recipe (Oven or Slow Cooker) image

Cowboy Baked Beans (aka Calico Beans) are loaded with ground beef and applewood smoked bacon. A great party food recipe for large groups.

Provided by Lisa Hatfield

Categories     Side Dish

Time 1h20m

Number Of Ingredients 12

1 lb bacon (applewood smoked )
1 large yellow onion (chopped)
2 cloves garlic (minced)
1 lb ground beef
48 ounces baked beans ((don't drain))
32 ounces kidney beans ((drain))
16 ounces cannellini beans ((drain) )
32 ounces black beans ((drain))
1/4 cup brown sugar
1/4 cup apple cider vinegar
1 cup ketchup
2 tablespoons yellow mustard

Steps:

  • Decide if you are going to make them in a slow cooker or bake in the oven. You can use a deep casserole dish or large pot like a dutch oven. I like a large heavy cast iron pot so I can cook in it and finish baking all in one. Slow cookers are great for parties to keep them warm for several hours.
  • Chop the sliced uncooked bacon into small pieces, over medium heat, brown the bacon in a heavy cast-iron skillet or a large cast iron dutch oven on the stove top using a wooden spoon. Tip, you can cut the bacon into small pieces with clean kitchen scissors right into the pot-I find this faster!
  • Remove the crispy cooked bacon to a small bowl with a slotted spoon. Don't remove the bacon drippings from the pan. Next add the chopped onion and brown for 5-6 minutes until translucent, add the minced garlic, stir for one minute.
  • Next, brown the ground beef, cook for 6-8 minutes. Next, add the bacon, back in with the cooked ground beef, onion, and garlic.
  • Next, add 3 cans of baked beans (don't drain), 2 cans of kidney beans (drain), 1 can of cannellini beans (drain), and 2 cans of black beans (drain).
  • Add the remaining ingredients; brown sugar, cider vinegar, ketchup, and yellow mustard. Stir all the ingredients well to combine.
  • Place into the slow cooker or large dutch oven or large deep casserole dish. The baked beans usually doesn't all fit in one standard 9 x 13, you need a deeper dish.
  • Cook in slow cooker crockpot on low for 2 hours OR bake 350 degrees for 1 1/2 hours in a large covered dish. Serve hot.

HOMESTEAD COWBOY BEANS

Homestead Cowboy Beans image

I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

DOLLY PARTON'S COWBOY PORK AND BEANS

Dolly Parton's Cowboy Pork and Beans image

Another celebrity recipe from my collection. I have never heard of October beans, but the University of Tennessee has this to say: "Horticultural beans, known as shelly or October beans, are grown on a limited acreage in Tennessee."

Provided by Lennie

Categories     Beans

Time 40m

Yield 4 serving(s)

Number Of Ingredients 9

1 lb ground beef
2 medium onions, chopped fine
1 small bell pepper, chopped fine
2 (1 ounce) cans pork and beans or 5 cups october beans
1 teaspoon vinegar
1/4 cup brown sugar
2 teaspoons prepared mustard
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • Brown ground beef, onions and pepper in a 10" skillet.
  • Add remaining ingredients.
  • Pour into baking dish and bake for about 15-20 minutes or until mixture is bubbly.

Tips:

  • Soaking the beans overnight helps to reduce cooking time and makes them more digestible.
  • If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 2 minutes, then removing them from the heat and letting them sit for 1 hour.
  • Use a large pot to cook the beans, as they will expand as they cook.
  • Add the salt to the beans after they have cooked, as salt can toughen the beans if added too early.
  • Use a variety of beans in your cowboy beans, such as pinto beans, black beans, and kidney beans.
  • Add some vegetables to your cowboy beans, such as diced onions, bell peppers, and corn.
  • Serve cowboy beans with cornbread, biscuits, or rice.

Conclusion:

Cowboy beans are a hearty and flavorful dish that is perfect for a casual meal. They are easy to make and can be tailored to your own taste preferences. Whether you like them spicy, smoky, or sweet, there is a cowboy bean recipe out there for you. So next time you're looking for a quick and easy meal, give cowboy beans a try.
